INGREDIENTS:
10-12 small green mangoes
1 cup rice vinegar
1 cup water
3 cups sugar
1 tbsp Hawaiian salt
10 li hing mui seeds
Optional: 10 drops of red food coloring
Directions:
1.) Peel and slice 10-12 small green mangoes.
2.) In a medium size pot, combine rice vinegar, water, sugar, and salt. Simmer on medium heat until salt and sugar dissolves. Let it cool completely.
3.) Add half of the sliced mangoes into a large container. Add 5 li hing mui seeds. Add remaining sliced mangoes followed by 5 more li hing mui seeds.
4.) Pour in the vinegar mixture. Optional: add red food coloring.
5.) Mix well and refrigerate for 72 hours before serving.

Made several jars here in the PI, only problem is there is no Li hing moi or li hing moi powder. Gonna have to wait when my Vaca is over and return to the states to make more with the li hing moi.
