I really enjoyed my conversation with Mary Ruddick. She’s a practicing nutritionist and understands what works in “real life” versus what works in theory. We talked about what we’re seeing in our practices and what has been working for our patients.
Mary Ruddick is a seasoned medical nutritionist, researcher, and philanthropist who specializes in metabolic, immune, and nervous system disorders. She spent the last several years traveling throughout Africa, the Blue Zones, and throughout remote regions of the world to observe the diets of those not affected by chronic, infectious, or emergent disease. She is currently studying with tribes throughout Latin and South America while concurrently conducting a twelve-month study on Neuropathy in the States.
This is a two-part interview so stay tuned for part 2.
We discuss the following:
1:48 All about Mary Ruddick
2:29 At what point should we decide that the diet is not working
4:01 Mary’s healing journey
6:09 Example of markers
8:57 Oxalate issues
9:54 Recommended Daily Intake (RDI) on a carnivore diet
12:21 Thiamine
16:08 Consuming organ meat
21:10 Who should really avoid consuming organ meat
21:48 Thoughts on folate
23:43 Thoughts on a carnivore diet being dangerous to thyroid health
26:56 Hypothyroid symptoms
32:25 Thoughts on supplementing iodine
39:27 Thoughts on fasting and hypothyroid on a ketogenic diet
42:08 Cori cycle and ATP energy cycle
44:18 Slow metabolism
47:32 Supplemental version of melatonin
48:08 Thoughts on supporting testosterone
51:01 Broccoli is one of the safer plant food

Lots of questions on thiamine and iodine! Use this protocol for iodine: nutritionwithjudy.com/wp-content/uploads/2021/06/NwJ-Iodine-Protocol-Sample-June-2021.pdf. Testing is best: nutritionwithjudy.com/shopping/functional-tests/24-hour-urine-iodine-loading-test-kit/. (the added bromide and fluoride are very helpful in dosage of iodine). And then for thiamine, this is the one I recommend to my clients. us.fullscript.com/product_cards/75937/redirect?store_slug=jcho1586985483 1-2 daily but work with your practitioner!

Yesterday was my 6 month wellness checkup. My doctor is my TRT doctor as well as my primary care physician. The results of my bloodwork stunned even him. Testosterone 997 and estrogen levels and free testosterone perfect. Thyroid levels spot on. Hermeticrit and Hemoglobin were fantastic. Insulin levels under 3. A1c is 4.3. I'm 66 years old strict carnivore. Not a health issue at all. My doctor is 59 and he is a keto fan, never tried strict carnivore. But I think I made a convert as he said my bloodwork looked like an athletes bloodwork. He was shocked to learn that over 20 years ago I was 200 pounds heavier and dying from diabetes, heart disease and kidney disease with 2 horrible auto immune diseases. I was fat fat fat. Now I'm right around 200 pounds and 12 to 15% bodyfat. No ED at my age, no arthritis and excellent strength for an old fart. I'm being trained by a former SEC strength coach. Meat and weight training along with TRT has totally changed my life. My wife is about 90% carnivore. She eats some salad and other veg. Rarely eating processed foods. Her bloodwork was also spot on yesterday. And the great thing is that both of us had higher cholesterol levels and he understood that it was not an issue. He just looked at HDL and tryglicerides and knew we were healthy. He thinks statins are stupid. It's fantastic for a doctor to finally understand true health. I've had former doctors tell me I need statins and an all meat diet would kill me.... 7 years carnivore now and I'm not dead. Heck, I'm not even slowing down. Glad to hear there are more doctors that are coming to the light that meat heals. BTW iodine cured my Hashimotos several years ago too. And I still have a full head of hair. Thanks for all you do.

Great discussion. The vitamin A, Iodine and testosterone parts really spoke to me. I know there's a lot of controversy about vitamin A and its potential toxicity. I worked with the naturopathic doctor last year who is known for his 'vitA is always toxic' stance and it really spooked me. I ended up eating a TON of beans because he said they were good for detoxing 'toxic bile' filled with 'toxic vitamin A'. But I ended up developing problems from all those beans (lectins, oxalates which I didn't know about). Ugh. He was ADAMANT that iodine, specifically potassium iodide, would ruin the thyroid. But I hear from so many discussions like this one that the opposite is happening. It's so challenging to know what's true.
@NutritionwithJudy
@NutritionwithJudy 2 жыл бұрын
Understand fully. I think honestly, the truth lies in the middle and we have to find where that truth is for each and every one of us. Most of my clients, I don't recommend liver. But I also don't think you need to go as far to the edge of zero A. I just don't think it's ancestrally consistent. That would mean no salmon, no eggs and that is wiping out so many health foods. Te beans are tricky. Most cultures didn't eat beans and I've listened to a lot of content on the logic of it. I get it, the fiber will clean up the bile and gut to remove the toxins but there are other ways to do it without all the antinutrients. I know it's not easy but test the waters in everything and find what your heart trusts and what makes you ultimately feel better (better = less physical and mental symptoms). Hope this helps!❤

@user-mp1gr4ri8i
@user-mp1gr4ri8i 2 жыл бұрын
@@soteriacharis6338 No. Meat broth is different than bone broth in that it is not cooked as long. I use chicken thighs, skin on bone in, and cook for 2 hours. This releases all the good stuff like collagen, without extracting the minerals from the bones. If you need to heal your gut, those minerals from the bones can be a bit harsh and inflammatory.

I would really SO appreciate a video, a conversation on hyperthyroidism/graves disease. I've waiting to see an endocrinologist for 6 weeks, so I'm attempting to manage it on my own and through Google because there's just not a lot of info out here. My T3 and T4 are very high and TSH .01. My liver is also compromised with ALT/AST and ferritin very high. 😢 I have been 95% carnivore for 30 months but now I am only eating red meat, bacon and water because anything else has iodine or iron that I am filled with apparently. I know I'm dreaming but I would just love to pick either of your brains about this. Keep doing what you're doing, Judy! Thank you so much for bringing the Carnivore Summit to fruition! What a gem! I bought full access so that I can go back to the interviews and videos and revisit whenever I like. I have had lifelong Hashimotos Hypothyroidism for 60 years and thanks to listening to your videos, iodine has been an absolute lifesaver! My body temperatures taken as soon as I was waking, was in the upper 96-lower 97 range for the past few months. Extremely urgent priorities were delayed because of being so weak, tired and brainfog!. But after being on Lugal's iodine for just about 10 days, my body temperature went up to the lower 98 temperature.my brain fog, weakness and fatique has totally dissappeared ! can't express how grateful I am for the iodine education on your channel because of it being a total game changer!I am also relieved that getting closer to about 90% carnivore from low carb, was not responsable for the earlier negative symptoms! I would always feel better to eat broccoli over fruit even if broccoli is higher histamine. Any recommendations on aquiring blood/ketosis testing?

Hello Judy and Mary - thank you so much for this info. I have Hashimotos - did carnivore which lowered my antibodies. But once I started iodine (started very slowly and am now up to 100 - 200 mg/day) my body just woke up. I sleep better (sometimes 8 hours through) and energy is better in my 60's than when I was 30. Did go through detox (actually think I still am) but worth it!

@@lorna7715 I did but didn't find it helpful. I was so worried about "overdosing" (which can occur over 1 GRAM) that I increased my doses very slowly. It wasn't till I read "The Iodine Crisis" by Lynne Farrow and Dr. David Brownstein's book and increased my doses that I found great results.

@@SassyPieHole999 -pls read "The Iodine Crisis" by Lynne Farrow and Dr. David Brownstein's iodine book (I liked hers better). It will give you guidelines on dosage and handling detox. I worried about the "fuel on the fire" too but was never an issue for me. You will definitely detox (I still am and I'm 1+ years in). If you are taking synthroid, that may be the issue. I'm on desiccated thyroid, with a lower dose than my doctor originally prescribed (the higher dose made me hyper, not the iodine). I only started feeling the "waking up" once I was over the 50mg/day dose. I now give iodine to my kids and pets. Be aware iodine will temporarily increase your TSH, which the endocrinologist will think is making you more hypo - read the book for explanation.

@@SassyPieHole999 I kept a journal with doses and results - you may find that helpful. As for carnivore - you may not be getting enough fat. Judy is good info source, as well as Dr. Elizabeth Bright who advocates eating a stick or two of butter a day. Personally I can't eat that much, but I do usually manage one stick and it was helpful. Good luck to you and let me know how you are doing or if you have any questions.

Not clearing estrogen from the liver points to a B2 issue. Even if getting sufficient B2, if insufficient in iodine, selenium and/or molybdenum, B2 is inactive. Just another reason why iodine is so vital in our healing - it makes B2 work so our livers can clear estrogen.

Fasting for anymore then 16 hours on carnivore for me caused me to lose my period even with just 2 days of this. I've always had a regular cycle. I have very poor digestion and low thyroid symptoms but levels are low normal and medication makes me feel hyperthyroid. Unfortunately I never felt good on carnivore, probably from not breaking down and absorbing nutrients. I am the one to get constipation from fats due to slowing my digestion further.

I battled the past two years with SI joint pain. I went Keto in August of 2018 and carnivore about a year later. When I went carnivore I also greatly increased the amount of eggs I was eating. I went to 4-6 per day. I've stopped eating eggs completely and haven't had any SI joint pain in 2 months. Bummer because I really like eggs but joint damage isn't a worthwhile tradeoff. Would be interesting to understand what mechanism is at work here. It's clearly an autoimmune process.

Excellent point at 21:13. What do you guys recommend to increase the production of bile in the liver? I am not just asking about the bile flow, I am also asking about bile production - because it's produced by the liver. I would like to know what your recommendations are to a.) increase the bile production in the liver; and b.) push that produced bile out of the liver into the bile sac; and c.) increase bile flow i.e., release the bile from the bile sac.

This is very very individualized. But the best thing to do is heal the gut. A meat only diet will help reduce toxins entering the body and you may have to limit fats for a bit (the fat content will be dependent on your stools). You can take ox bile and digestive enzymes with some betaine HCl to see if it helps. As you heal, your liver, gallbladder can function better. There are supplements to help clear up bile and support the organs but then it gets very nuanced. That's why I first start with my gut healing kit and then get more nuances with people thereafter. nutritionwithjudy.com/shopping/supplements/gut-health/gut-healing-kit/ (includes bile) but you may want to add digestive enzymes like Intenzyme (it's in my shop). Overtime, the goal is to eat more fat which stimulates more bile production from the liver. But you can see how important healing the liver is in all of this. Less toxins in so the body can starting healing and functioning better.

Same. I don't think 2.0 is achievable for many on a carnivore diet. The "rules" are a bit different to be in ketosis when you eat meat-only. I'm usually happy with 1.0 in the morning and some days that's not possible too. I would never go undereating protein as it's a tool for longevity.

I found I have bottle of rasberry keytones for weight loss. What are pill form keytones? Do they do any good. I brought well before I went carnivore. What does that stuff do? I have COVID and was looking to see if I had any Thiamine because one of your guests mentioned it. I used to buy everything that was inexpensive because I've had congestion and allergies for decades. Going carnivore it's weird not buying medicine every time I am near a pharmacy. I feel better than I have in decades but I am sick. Like I have a lingering case of COVID-19. I have a mild sore throat and on and off yucky feeling and headache. To contrast my typical cold or seasonal allergies have congestion that get's irritating. It's weird to have the aches and overall yucky feeling and still be able to breathe. The malaise is not constant nor really bad. I am basically fine but I ain't right and time to time I feel kind of bad. I have mistakenly had peanuts, peanut butter and chocolate with almonds and felt gut hurt after each. But when I stay full carnivore I feel way better. I was diagnosed on 1/19/22 and tested positive again on 02/09/22 and now its 2/11/22. My boss said covid cant last more than that long or a reinfection. I am vaccinated not boosted. I went Carnivore January 10 and got rid of my decongestants that week. I started at 253 and am down to 237. My energy level and stuff is just better on carnivore, but COVID kind of sucks.

@NutritionwithJudy
@NutritionwithJudy 2 жыл бұрын
I just responded to someone so I'm going to copy/paste there. The beans are tricky. Hope this helps To answer your questions specifically, I think Grant and Dr. Garrett are right in a lot of their work but I don't think people need to limit to the extreme they say. Is vitamin A not a vitamin and may not be necessary? Maybe, I haven't done the nuanced research with that level but I don't think we need to remove ALL vitamin A sources. I confirmed that with Grant. So whether it's beneficial or not for us to abstain completely, if it removes a lot of solid foods, then I don't agree there. All fat soluble vitamins balance each other. So if you eat salmon which has plenty of vitamin D and K. Then maybe the bit of vitamin A in it is a non-issue. I think we should be careful of vitamin A but not to the extreme they say. Does that make sense? I wrote articles on it too: nutritionwithjudy.com/liver-and-risks-of-vitamin-a-toxicity/ nutritionwithjudy.com/dont-eat-just-beef/

If you eating very low carb or even strict carnivore you would not follow the normal rdi advice as its not explicable, with so many anti nutrients in recommended foods they up the rdi to balance it all out. If your eating a variety of meats and associated fats, good quality salts, occasional add pieces of organs, you wont need to supplement anything.
