The one I like the most is the clip at 11:00. It is like Gordon is teaching that cook to be assertive through his pushing on her. She naturally reacts in laughter because she feels uncomfortable loudly requesting the dish from her team, but Gordon asks if the cooking is funny, forcing her to confront her nervous reaction. You can see that even the shape of her face changes the next time she says "let's go team". Quite a nice example of real time personality development.
