This guy cracks me up, “eyeball it”. He is such a breath of fresh air for cooking. The soup was ok. I used sunflower oil because many other recipes call for that or peanut oil and I did not have any peanut oil.

My husband and I discovered the deliciousness of Japanese food at a place somewhat close to us. The downside, of course, is the cost. We consider it reasonably expensive (the quality of the food is worth the price.) I absolutely love the clear soup, but I don’t want to constantly be paying for it. So happy to find this video!

I'll be honest and say it's not an EXACT replica as there are many variables at play here but it's close. I too absolutely love the clear soup and this recipe here is close enough to satisfy my urge when I crave it. Thanks for commenting!

So if I make homemade chicken broth (essentially the same ingredients you've used, but it makes its own stock instead of adding commercial cartons), then add the mushroom & scallion, I've basically got the same thing, right? I happen to have made broth yesterday, otherwise I wouldn't be asking about it 😁 This seems like a really good use of some of it, maybe just a bowl at a time. I'm becoming addicted to homemade broth..

Looks good. I know you said it was your first time using ginger. Next time you can scrape the skin off the ginger easily with the side of a spoon before cutting it into slices. Who knows how many people have handled that ginger before you put it in your soup.

No, I used them more for aesthetics than for consumption. The mushrooms can be placed into the soup and cooked/boiled in for a few minutes just prior to serving if you choose to do so.
