I notice the knife he uses is pretty thin. I've found thin knives to be much nicer to work with ... my everyday knife cost me $2.65 at 99 Ranch, a real cheap-O but fairly decent steel and I keep it nice and sharp and it works great. "3 Ladies" brand.
