Only thing to note to those new to crumpets: let the metal rings get up to heat before you add the batter. That way the batter will cook and shrink away from the ring. The ring will lift off clean when the crumpet's sides shrink.

I love your show. It reminds me of my time when I worked for the NHS in 2007... Just to mention it: never use tuna-cans. They're laquered from the inside with a epoxy-resin that will when heated contaminate your food with reasonable amounts of bisphenole... Anyway, everyone needs eggrings!

Finally found a recipe that is a true crumpet and far better than most of the so-called professionals came up with their versions. The only thing I found was that the hydration level was a bit high so I added an extra 50g of flour and bingo crumpets that were edible and very tasty. Thank you very much for the recipe.

@Susan Taylor, with all due respect, here in the west coast we recognize them as two very different things. If you haven’t tried a crumpet yet, you can find them at Trader Joe’s or Safeway sometimes. Not sure if you have one of those in your neck of the woods.

When I made I found putting the batter in a warm place for 20 to 25 minutes worked best for me, more than that it collapses on itself.

My mouth is watering right now, I tried to make them once and everything I did looked exactly the same but I thing I tried to fry them and used too much heat and oil instead of cooking them slowly, I have the crumpet rings and they cost a ton of money in the stores and I'm sure they are not as good as quality home made crumpets, I think it's time to try again and be more patient!
