As an English/Italian in America, I partake in eating cannolis regularly, and I can say that the chocolate is not really traditional, but it is used in some bakeries as a means to have the cannoli a longer shelf time, if you coat the inside of the shell, and let the filling go in after it keeps the shell from getting soggy while sitting. Fresh cannolis are often just packed with filling and no chocolate, and just Pistachios on the ends ( as you did do ) . As for the filling, do not just use Ricotta, while this is the 100% authentic way, you really should try adding mascarpone, it makes it slightly creamier. 1 tip I suggest is if you plan to add this to the menu in your pizza shop in the future, do not add chocolate syrup over the top as some do here in the USA, it makes a mess and overpowers it. As a cost-cutting measure, pack 1 end with chocolate chips and the other end with pistachio, so you get the best of both while keeping cost down over pistachios on both ends. If you find yourself with extra filling when making a large batch, it makes the BEST Filling for a Layered Cake

Italian here; and you did a wonderful job with them considering you've never even tried them before, so well done! I would suggest in the future you use "mini" chocolate chips and rather than just the ends typically they are mixed into the ricotta mixture, it gives another element of texture. Also as an alternative flavoring try almond extract or amaretto liquor. Hope that info helps, ciao!

Italian here, a "canna" is a rod (as in fishing rod) , or a cane (as in sugarcane or bamboo) basically something long. Also the watering hjose is called a "canna"

Anglo-italian here, married to a sicilian! 😀 you've done a great job there! Chocolate chips are traditionally in the ricotta cheese as well as on the ends (or pistachios). The ricotta is actually supposed to be sieved actually, to make it smoother. Quite a long process. But worth it! Love you guys! 😍

Pro Tip for easily opening pistachios (and saving your fingertips) After prying open the 1st pistachio, save one of the shells & use that one pry open all the rest. It's larger & stronger than your finger nail & works like a charm...

You actually want to remove the shells from the forms while they are jusssst cool enough to touch and it will be easier. use a tea towel to hold on if needed and gently twist to remove. If you use a dusting of flour on the inside of the circle of dough instead of spray it may work better. I haven't ever greased my forms. For filling ideas- lemon zest and chopped or small chips of chocolate used with the sugar (no cinnamon) piped inside is amazing. Warning, don't fill the cannoli until ready to eat,if you fill them too early or try to have some "leftover" they'll go soggy if filled. Just store the filling and shells separately, unless you can eat the whole batch in one sitting! 😁

I'm in Canada but there's a bunch of local bakeries around here that all do Cannoli and I'm personally a huge fan of the lemon ones, just filled with a lemon curd somewhere between what you would have in lemon merengue pie and lemon tarts, the bakeries around here also usually put on some powdered sugar or even large crystal sugar on top. Ones with just a pure chocolate filling are pretty good as well, same with custard. Not sure how *truly* authentic they are but they sure are delicious.

I grew up on cannoli, my favourite desert. For a first time they are excellent. We also put candied peel sometimes. There's a chance that the ones that got stuck was because you hit the mould with egg when you were doing the folding. They work baked as well but not as much as fried.

Small chopped marchino cherries, and grated chocolate bar inside. With almond extract. Best way. I come from a line of Aspositos. Family favorite for sure. Unfortunately my mom was the only one left that handmade the shells, and I lost her from cancer October 29th 2020.

When we make these at work, we dip one end in chocolate. Then prepare the filling very similar to yours except we mix mini chocolate chips into the ricotta filling, then dip both ends in pistachios. Or one end pistachio and the other side in more chips. Then powdered sugar on top 😊

If you ever feel like making an "easier" foreign recipe video as a "break", allow me to suggest making Arepas. They're very easy to make (specially with the "modernly traditional" way, using pre-cooked white corn flour, most commonly known as Harina P.A.N.), and can be filled with just about everything (ham and cheese, mozzarella and tomato, pulled pork, chicken salad, baked beans, etc.). They're a great gluten-free alternative for bread, and can also be prepared deep-fried, which makes them absolutely delicious.

I've enjoyed plenty of cannoli, but I never actually looked into what goes into the pastry. I had no idea there was Marsala wine in it. When I have eaten them before there is no cinnamon but just chocolate, cream and Marsala. (My Mum’s cousin is half Italian). It is basically Italy’s version of a brandy snap.

They came out great. I have had them made in Italy and in new Haven Connecticut and sometimes they use candied fruit in them , mini chocolate chips either in with the ricotta or just on the ends, pistachios on the end. They are tied for my favorite all time dessert.

The reason the moulds didn't come out of all of them is because some of them you had overhang, where the overlap was along the longer edge of the mould and the longer edge of the shell was over the short edge of the mould. i said out loud you wouldn't get them all out when you were rolling them like that. the dough just expanded over the ends. you shouldn't have any issue getting them out otherwise because the oil will seep in between and the moulds will expand slightly and stretch out the dough before it hardens in the oil, then once cool it will contract and slide out easily.

I loved your response to Chloe asking if you can get drunk on Marsala wine. I once was on a church organised camping trip in South of France wit a load of 16/17 y olds (nightmare age, especially the girls, I warn you now!) We took turns for cooking, and the girls wanted to do melon in port. They went shopping for it, and having no knowledge of wine, bought a Portuguese wine instead of Port. We had a good laugh, but congrats, they got there half way.

I dont think I have ever had a ricotta based cannoli. I got one from a restaurant in Massachusettes called The Chateau. It was cream based. I wonder if this one is any good. Also, you should make an authentic Italian cheesecake where the base isnt cream cheese mostly, its ricotta mostly.

Next time put the *long* axis of the tube across the long diameter of your circle of dough. That way the dough won't fold over the ends of the tube, making it impossible to get out!
