I love watching this Cheese Making. I am as Italian 🇮🇹 as can be, but I never heard of Basket Cheese & I think that’s what this amazing Cheese Maker is making . I just learned about this tonight. Incredible talent making Cheese. Such a talent. Now I’m hungry for CHEESE & especially Ricotta Cheese. The Music Is Perfect Too! Thanks 🙏🏼

I was researching the city of Roseto Valfortore, when I ran across this delightful video. I had to stand up and dance while watching it.....the music is so invigorating...so classic Italiano. Bravo. Thanks for the memories.

God bless Nonno. I would love to hang out with him for a while. I started making my own cheese about a year ago and like making everything the old Italian way. I could learn a lot from Nonno.

Just saw a goat herder make cheese like this in Sicily. Slightly different methods, but the same general principle. Did your Nonno make it with cow's milk? Also did he add water to it and rennet prior to warming? How nice to post this, as there are fewer people making it the old fashioned way.

he's making cottage cheese. ricotta cheese is recooked whey that's then skimmed. big faker.

You are 100% wrong. Cottage cheese is not what he made.

The second batch is rebooked whey.....i.e. ricotta, twice cooked.

What he made first is a soft cream cheese named for the basket it's put in. If you had bothered to watch the rest, you'd see at the end where he puts all the whey together and recooks it to, then, get the ricotta.
