About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the KZbin channel Pailin's Kitchen.
Pai was born and raised in southern Thailand where she spent much of her "playtime" in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via KZbin videos, her cookbook, and cooking classes. She currently lives in Vancouver, and goes to Thailand every year to visit her family. Visit her at hot-thai-kitchen.com

The bad thing with chillies is that you get addicted to them, you get a constant urge for spicy food that can be pretty anoying. Love your channel. Sorry for bad eng, i`m from Sweden and old ;)

From my observation many of us are from countries which don't have English as mother tongue. Me too. Now, from my personally point of view, English is language, and the most important of any language is to communicate. Have you ever heard "No can do" "Long time no see" etc? All are grammatically wrong, yet they can communicate. That's the most important of all. Of cause if you can convey the meaning you want to do with right grammar/words/accent, that would be the best, but that the second point if you ask me. It never fail to make me smile anytime I see somebody laugh at others who speak English in a wrong way, because most of the time these people who laugh are not English speakers at all. They just use English as a ladder for them to feel superior. Fact is that they are not. It's just inferiority complex turns superiority complex. Really basic psychology. Not to talk about the colonial mentality: English or any specific language was the way to show that they were "close" to their former colonial masters/close to the source of Western knowledge (which they praise above their own knowledge) and was a sign to show that they are "higher" than their local friends since they were trusted by those masters/could access to Western knowledge while their friends were not. They forget/ignore that no matter how close they were to those masters, still they were always servants, not bosses. This kind of thought stuck deep down in their mind even after the colonial era gone -- those who are good in English are above others.

I've always liked spicy food. But since I began transitioning (MTF), I've craved it even more so. The hotter, the better. At some point, I want to try the hottest peppers around, Carolina Reapers.

i don't know about you but to me western food is too bland and often loaded with cheese. i have to retrofit dishes i like to have more heat.

It's really common in Mexican cuisine for us to throw in whole spicy chilies for the same purpose as this. I'm one of those that eats those whole chilies.

@@marialiyubman Always important to be eating spirulina and or chlorella to help detoxify from heavy metals & all the other pollutants we as "modern humans" have to deal with. And for sure not to eat tuna every week!!!

I sauteed the tuna with grounded coriander seeds, black pepper, fish sauce and sugar and it turned out really good. I just learn from you how to serve coriander seeds in cuisine so I have tried this recipes 4 years ago and I loved it. I ate it with rice, make sushi rolls with it or just eat it like a snack.

I live in hot climate (Central Texas) and I've found that the main problem with keeping a makrut lime tree alive is keeping it from taking over your entire yard, they grow insanely fast (again, once established). Oh and they're covered with extremely nasty thorns, like an inch long or more.

Yesterday I made tuna avocado salad for the first time. Came out fantastic. I love spicy food too so will definitely give this recipe a try.

Many times I would make a quick roadside lunch using canned tuna with rice. I put crushed black pepper in the rice when cooking it and add tuna after the rice was cooked and simmer for a few minutes. I didn't have much space for condiments as I needed that for the spares I had to carry for my job. As always Pai another great video. Good luck from Queensland, Down under.

My favorite menu!! 😍😋 And yes, in the south we're used to the curry paste that has more yellow-ish color because we love adding turmerics and the spice is another level comparing to other parts of Thailand. I am also from the south, Koh Samui - Suratthani. I know Pai is also from the south but what province I'm not sure. Anyway, I'm a big fan of you! 😊

I have made it. Unless you are very sensitive, the canned tuna flavor is overwhelmed and greatly muted by the spices.

Even as a strapped for money college student, this is such a wonderful recipe. I actually topped this with some home made khao khua before serving and it elevated this dish to a whole other level! Strongly recommend trying it the next time you make it. 😁

i make something similar with can tuna as well. its great as a last minute work lunch. and if you cook this longer, the chillies flavor the dish and become less spicy. or you can customize the dish and use chillies with less kick.

I rarely eat chili peppers (I like them, my stomach, not so much…), but when I do, I love them fresh and possibly ice-cold… I can’t stand wilted chili peppers… Also, I totally relate to the sentence:”chilies are hard to predict”. The spiciest chili I had in my entire life, and I’ve had even bird’s eye once by accident… was a simple green chili pepper you can find at any grocery store. Except it came from a farmer’s market, and a friend who bought an entire bag gave me one. Legend has it that my lips are still burnt off. I couldn’t feel my lips for like a whole week… from a simple chili!!!

I’m South Indian and my family has a similar recipe made with shark! It’s kind of flaky, spicy, and delicious, pairs well with hot rice 😋 exciting to see other dishes with the same concept!

We go out for Thai food every week and always order it 'Thai spicy' which guarantees we get lots of red chilis (but cut into smaller pieces). Definitely love that Thai heat!

Again: so fun to watch and such a great idea for a recipe! Some things might be difficult to find here in Germany, like those leaves. But about turmeric: I just lately found a recipe for turmeric tea by Chef Harpal Singh Sokhi from India. Never thought that turmeric could make a tea. You should be able to find it.

Germany: Lime leaves are easy to find in Asia Stores, they come frozen and you can keep them eternally in your freezer. Fresh kurkuma is available also in supermarkets.
