For 15 years of my life in Turkey, I first saw and myself took part in the preparation of Rosehip Jam. In Turkey, it is called Kuşburnu Reçeli. This Jam is considered a Royal Jam, as its preparation is a very laborious process. And Jam itself is one of the best preventive and tonic remedies. And also, thanks to its taste and aroma, it is also an excellent vitamin dessert for tea!
Recipe:
1. From 13 kg of dry rose hips, we got 25 jars (0.66) of Jam.
2. Sort out the rosehip and clean it from the tails and stalks.
3.Rinse well several times with plenty of water.
4. Boil the rose hips in a saucepan - the water should cover the berries.
We used 3 pressure cookers, each 5 lt.
5.Boiled soft rosehip chop and skip on
colander to remove small seeds.
6. Then pass the mixture 2 more times through a fine sieve,
to remove fluff from the mixture.
7.Add sugar at the rate of 500 g of sugar per 1 kg of dry rose hips.
8. Cook the jam, stirring constantly until the desired thickness.
9. Pour into jars, twist and store in a cool place.
10. To use in cold, winter time, as a preventive
and fortifying agent.
11. Consume anytime as a delicious aromatic dessert!
