Fascinating. Thank you for sharing. As a high school student, I worked in an ice cream shop that is known for chews ( Peppermint, Peanut Butter, Caramel were the top 3 sellers ). I prepared the peanut butter that was rolled into the outer chew part ( that you had shown being aerated in the beginning ). As I recall, we used 25 lbs of peanuts, 1 lb of salt, and I ran the peanuts in a typical meat grinder ( hand grind ), three or four times. This became the yummy center that was somewhat moist from the peanut oil, and we folded it in to the chew part as you did, but had a tool that rolled them out into 3 inch lengths. As I recall - that was 45 years ago.
