Neither had had anything like these before, having had mainly American food as well as food from their respective cultures. My mom was Scottish and we would have steak pie at least once a month. My dad was a butcher so we always had the marked-down meat. I still use my mom’s pastry recipe for sausage rolls which are a favorite of my family. Really like your music! Blessings from Seattle!

That was a very well described video. My mother used to put an egg cup in the pie to prevent the pie top falling. This was in WW2 when butter was rationed so it was a short crust pastry with minimum margarine. I can still taste it today (in my mind).

What a great and simple recipe. I will make it sometime i January 19. May I suggest that you take out the meat after browning it and then add the vegetables AND salt. This way the moisture generated will deglaze the pan and the meat will keep its moisture.

The only English recipe for baked pastry using suet is a clanger like this one I did some time back: kzbin.info/www/bejne/pIe2o6uIh5llfpo Clangers can have many fillings, including sweet and savoury; and sometimes in the same clanger, with meat and veg one end and a sweet filling at the other end. Suet pastry is traditionally steamed for hours like steak and kidney pudding, but much less often it is baked.

I used to watch my Mom make sweet pies. Apple, Cherry, Huckleberry, Peach! Yum!!!She used the same techniques you used to build your pies before baking! Once you had the lid on and had crimped the edges with the fork, I saw Mom getting ready to remove the excess dough off her pies. I remember her specifically telling me to use the back of the knife to trim the excess dough, so of course I was hoping that’s the way you did it!👍🏼 Thanks for the memories!

18:00 - My mum would always drain some of the watery meat-juice off to use when making the gravy, stir til smooth then add it back to the pot. Left over pastry scraps got rolled out to make a jam turnover and baked with the pie. A pot of custard went with it for pud. (just saying)

I'm 17 years old and I've started to take an interest in cooking; Lately, I've been making more sweet foods than savoury. I came across this video and used it as a tutorial to make my own steak pie. Me and my family enjoyed it so much, the pies were a bit smaller than I had hoped far as they seemed to shrink in the tins, apart from that, thank you! I started cooking young too and I greatly encourage young cooks. It's really a calling, and we know instinctively that we want to cook great food. A great cook is never without good company. I'm a great rhubarb fan to boot! If I can't find fresh rhubarb, I may use frozen or canned. How does rhubarb crumble and custard sound?

Steak & onion and steak & mushroom are classic British pie fillings, also chicken & mushroom. Mince (ground beef) pies are traditional London pies which you could buy in the pie & mash shops all over the greater London area. Sadly, very few pie & mash shops survive to this day. My nana born/raised in Scotland but came to & lived in Chicago since I was born... used to get (I assume from a friend, bakery or, ? imported) Meat pies (round w/ hole in center top dough, filled w/ ground meat & ?) "forfar bridies" (?) & lemon or jam tarts. Hadn't had them in so long & then, maybe... 10 yrs ago there was a "Scottish Festival" in a neighboring town & I was so happy to see them selling/serving all of those things & then some. Brought it all right back, it was like... even tho it had been so long, I could taste it BEFORE I even ate one of those meat pies. Like heaven. Haven't had OR even seen them, since... & it's been far too long. Will have to find them somehow... nom nom. I have just watched your very interesting video of the making and baking a steak pie. You have reminded me of my childhood when I watched my mother cook such pies, using the flour to help brown the meat and then even down to the cripping with the fork and the cutting of the excess pastry with the knife. Good point. Vinegar based condiments like Worcestershire sauce and balsamic vinegar reductions can add a dash of zest to a lot of pie fillings, soups and stews. I personally am not a fan of Worcestershire sauce, but that seems to put me in a minority. I have also been known to use dark soy sauce to brown a stew or gravy. Another unusual touch is to use Thai fish sauce or other anchovy based condiments to add another layer of flavour. Thanks for watching and commenting Carl.

Stabbing the bottom of the pastry stops it rising in the oven.Blind baking also helps. Cover the bottom of the pastry with grease proof paper weighed down with raw rice, or raw pasta, or dried beans. Cook for about 15 minutes at 150°. Remove the grease proof paper and rice or pasta or beans. Add filling pastry top and cook. Basic mistake is to put the filling in hot. Almost guarantees soggy bottom of pie. Let the filling cool first. Before putting it into the pastry. I suggest covering the pizza tray with foil so if the filling overflows it doesn’t mess up the oven. That pie looked banging

For a better result with the puff pastry, butter the tins before putting the puff pastry in and cook them blind for about 10 minutes. Then fill and put the lid on and back in the oven.

I use a pressure cooker to cook joints then cbreake it up even if it's not in cubes you still get the meat into the pie then I batch cook about 8 or 10 individual pies and freeze them after cooking them and letting them cool

The flaky pastry contrasts so well with the tender beef filling. Those enamel pie dishes are making a comeback, and deservedly so because they transfer heat from the oven efficiently while keeping shape for many years of use.

this reminds me of something i had while in Michigan called pasty's but its made with ground beef or steak. and the pie dough is made like a pocket so you can carry it. there so good i need to try to make it myself one day. i think the history is Cornish minors brought it to Michigan when they went there to work the iron mines. the Italians and Finns minors took over making them as well.

Looks lovely. I much prefer white pepper though ... black pepper doesn't have enough guts for me 😄 I like to thicken the stock at the end of cooking with a slurry of cornflour and water and add a good tbspn of hot English mustard. Cor now I'm hungry! 😁

Nice vid, tips,,,Let the filling go cold before filling your pie dish, also blind bake, if you don't the base and sides will be a soggy mess like the bottom of your lid.

Nor mine Steven, I much prefer them eaten several ways raw. Some of the best oysters I ever ate were in Trinidad, sold on a street food store, they were lots of tiny raw oysters served in a disposable cup with a spicy fresh sauce. I drool at the memory!

@@LazyCookPete My mouth is watering at those oysters in Trinidad, that I've never tasted. The other traditional food that I didn't care for was those game pies where they let the meat hang to be a little "high". I remember my mother making jugged hare (fresh roadkill given to her by a driver in a car rally 1960's) it tasted off to me after being hung for a week.

I use oxo beef gravy mix to thicken the pie if it's too loose, really enjoyed watching but I don't know how you manage in such a tiny kitchen.

ty we have what we have and make the best of it. ty for sharing your wonderful meal. i cheat i cook with pressure cooker on the meat can do cheap meat half the time saves on the gas bill to. ty on the pepper history nice touch.

I do a very similar recipe, but it's my own "deluxe" spin- steak, leeks, mushrooms, Guinness, beef stock for the filling. Short crust on the bottom, puff pastry on top.

I think, from memory, that the 'galloping gourmet' was Graham Kerr. A handy household hint- put the cubed meat, flour and any seasoning in a plastic bag and shake well. It means less mess on your work surface and you can use the surplus flour when cooking the beef and other ingredients. Good luck with the lottery win.

I lived in a farmhouse in Suffolk before I moved back here to North Wales. That kitchen was huge with an Aga cooker. It would have been the best possible setting for my videos.

delicious. first of all, i love these vids. it motivates me to play chef. my brit mum's recipe includes a worcestershire sauce. for my italian boyfriend i experimented adding garlic, wine, & tomato paste. love all the variations!!

Thanks Shay. I sometimes use English brown ale because it is sweet and malty and less hoppy, so it isn't so bitter tasting. A lot of modern craft beers are way too hoppy for cooking with. It's a recipe that is easy to tailor to your needs and make your own.

I remember the days before black pepper. I hated white pepper. It made me sneeze. When I discovered black pepper, I couldn't get enough of it. There were so many things in the shops now that we never saw as kids. I don't remember garlic, peppers, ginger, chillies, aubergines, courgettes and other things that we take for granted now. Tomatoes, strawberries, plums and other fruit and vegetables were strictly seasonal. There was something of a celebration when the first new potatoes of the year arrived. All we had, most of the time, was meat, potatoes, onions, carrots, swede and various types of cabbage. I lived in Hong Kong for a number of years and was surprised at the fact that Hong Kongers put white pepper in their congee. I don't remember it being used for much else. I ate it in congee and it was OK, but I'm still not a fan.

Yes I remember those days too. Marketeers called exotic foods like red peppers and garlic 'queer gear', which has an entirely different connotation nowadays. I prefer black pepper myself, in fact I'm a black pepper nut; but some traditional British recipes call for white pepper if we are to keep it authentic.
