I am Italian too and i actually have some chestnuts trees, i love it and eat them in many different ways: roasted, steamed, boiled like you did, dried then turned into flour to make cakes or even pasta, back in the days it was one of the few foods available for the population living in the north, in the mountains.

@@chrisgartenn not cooked, just dried for 30-40 days. To make proper flour i need to bring it to a mill with special stone for chestnuts, normal mills arent good enough because you need a really fine powder. But you can make a semi-acceptable flour by using a power blender, just be careful not to heat the flour too much.

@@chrisgartenn No, this is how it's done: first you dry the chestnuts, then you put them in a burlap sack or some other bag made with a strong fabric, and smash it against a stump or something, many times. Most of the outer shell will come off, same for the brown skin, and here comes an important part that it's often overlooked, you need some good variety of chestnuts for this job, here they've been selected over the centuries to facilited the peeling of the brown skin which is the biggest issue when dealing with chestnuts, for most preparations. Some of the peeling must be done by hand, and carefully selected to discard the bad chestnuts even for the smallest imperfections otherwise you ruin the whole batch of flour. Yes it's complicated and a pain in the ass that's must be why, in modern days, 1 kg of chesnut flour costs like 15 euro or more. There are modern machines that makes the job easiser, but very expensive and for industrial usage. The mill must be presented with perfectly peeled and dried chesnuts otherwise they wont grind them. Also the REAL drying process is not so simple: there are specially buildt small houses, in stone, and at the base of the house they start a slow fire to create smoke, and in the floor above they lay down the chestnuts to dry for a month or a little more, constantly keeping the smoke going, there used to be like one of those smokehouses for every town or county, and everybody brought their chestnuts there, now there is maybe one in the whole valley where i live and it's kept mostly to keep alive traditions.

I'm Italian too... and we definetely love our chestnuts. ❤ My grandma used to peel the outer shell and boil them with a bay leaf... then she removed the peel inside and added some sugar. I loved it so much. ❤❤

This is such a great thing to learn. It seems so simple but really, it would have taken so much trial and error (how long to boil, to rinse or not rinse, for how long, how to cut...) that I just never tried making them. And speaking of moms... this is something I wish I could have learned from my mom. Thank you for teaching this to me. I love all your videos!

Best is roasted for 15 min. The nutritional value when boiling for 40 is almost gone . Make a small incision on the outside and grill , best and still crunchy and tasty

You make a soup base with sauteed onions/garlic/carrots/celery and some people add a leek here. Then you add broth, seasonings of your choice, and prepared chestnuts, simmer until very tender, then blend until smooth! It's easy now that I can prep the chestnuts. @@Maangchi

Water chestnuts available India looks different.. The farmers smoke them first before selling , and they become black..we call it "singada". As you said, it's really hard to open it's shell. In markets here, we get ready to eat "white part inside" as well. Tender one's are also available and are in green color. They are more crunchy and delicious. ✨🫶🏻

My grandma used to cook a lot of chestnuts in autumn. She also made chestnut puree a lot of times. I still do not know if that's a side dish or a desert, since it's a little bit on the sweeter side. Not much of a chestnut fan, but can't wait for the next chestnut recipe. 😁

I love chestnuts, but they're quite expensive and hard to get (no market want to storage and sell them, as they get dry and moldy to quick), so sometimes I get them from internet...I love them roasted on butter 😋

I found tips for easy & safe ways to shell chestnuts on KZbin that involves washing, soaking in water for at least 2hrs to soften the shell; scoring the shell & inner membrane with scissors (safer than a knife!), then parboiling in lightly salted water ( to provide moisture into nut).Transfer to a baking sheet, scored side up. Preheat oven to 425F, roast no more than 10-15 mins. The shells will split open as steam from inside the nut expands. Remove to a bowl lined with a tea towel, wrapping to hold moisture & heat as you remove nutmeat from shell & membrane a few at a time. It is critical to keep nuts warm & wrapped in tea towel after roasting! Otherwise the inner membrane will stick to the nutmeat & be very difficult to remove. Proceed with recipe 😊! Hope this helps others enjoy this wonderful treat from nature 💕

Next time score it before boil, easier to peel. Put chestnut on coke cap for stable so won't run away and score chestnut tips cross. Either steam or boil, chestnut will split the tip so you can feel easily

I never taste this before. But all grocery stores and stores has cans of chestnuts that I hate taste because of company make this. I notice you just plain cook with water and I notice other series that cook with air fryer. I will try yours when I have a new apt, ok. I love watch your shows.

Here in Germany, around Christmas season, you also have lots of little street food huts (usually in the shape of a locomotive!) Selling roasted chestnuts. However, they dont come with a spoon so you have to peel them while walking, which often results in bleeding fingernails 😅 I'll definitely try your method when cooking them at home next time!

i tried chestnuts for the first time last year. This looks SO much easier than trying to cut an X and roast them. I will try this next time I can find some. They disappear quickly here when we have them in stock and I may have already missed my chance for this year 😭

Sometimes at the deli section at the Asian grocery story, they have these already cooked and pre-packaged. You mentioned when you were younger you opened them with your teeth. That's what I do in the car after I check out. I'm too impatient to wait until I get home and open them up with a knife like you do. I feel like a squirrel opening them with my teeth.
