Anyone noticed three things here? Most crucial part of cooking? I will tell you anyway lol... beef was cut against the grain thinly so that it cooks faster and the beef is tender and easy to chew if u cut on grain it will become hard. The veggies were blanches in hot water not boiled so that the veggies are chewable and lastly hot wok was use to cook quickly to seal all the flavours if your wok is cold and u quote it with oil it will release water especially the beef
@murilocruz77525 жыл бұрын
Another crucial part is the velveting of the beef.
@halifax53095 жыл бұрын
That would naturally happen when you combine egg and corn starch or potato starch also known as farina. I prefer potato starch u can apply a similar method to chicken before blanching for your stair frying before blanching the chicken in hot water as chicken cubes put some potato starch and mix it with water after blanching the chicken will turn out shiner than the stars
