My family runs a Pan Mee stall in the past. So here's some additional tips you guys might find useful:- 1) Gently marinate mince in oyster sauce, soy sauce, sesame oil, white pepper and a light coat of flour before cooking. It flavors the mince nicely. Some people also like adding dark soy to give a darker tone and sweetness. 2) We usually blanch the noodle in plain water and give it a quick cold bath in running water before putting it into the broth to avoid the flour getting into the soup and it also makes the noodle springy. 3) Saute'ing the ikan bilis with 2 slice of ginger before adding water gives the broth a little more edge. 4) And the most useful tip anyone can ever share to you: never stinge on MSG. @@faridatarmize Yes ada Pan Mee yg halal , kalau u visit Sungei Wang Shopping di Bukit Bintang , kedai Pan Mee tu ade di belah basement . Basement tu besar , so i suggest bila tak jumpa you mmg kena tanya orang² kedai di basement , ramai yg tahu sebab kedai Pan Mee tu mmg very popular .Jangan lupa ambil prawn dark sauce dier ,,Sooo sedap yum yum .🥰

To fry the ikan bilis, no need to use so much oil. Save some cooking oil by washing the ikan bilis clean and put some corn flour and mix then fry by spreading out on the pan. Slow fire till it turns golden brown n crunchy. The ikan bilis remain crunchy even the whole day. They will left a bit of oil and you can put some onto your noodle soup. If you can't find the panmee vege, you can replace it with sawi hijau (choy sum) too. Put some fishball in your ikan bilis stock, Wah! So nice.
