I made these cookies for a party this weekend and they were a hit! I did chill the dough for well over 24hrs. I'm glad I did, it was really soft by the time I got to the last cookie. Perfect touch of ginger, not too hot. I'll definitely be making these again. Thanks for the perfect instructions and humor. I love baking and laughing...two of my favorite things!

if you get a little bit of vegetable oil and rub it in your measuring cup before putting the molasses in it or any other syrupy stuff (honey, treacle etc) the syrup will just glide out of the cup and you won't have lots of syrup still left in the cup when you add it to your cooking. Works really well.

That's what I do. I'm surprised, and wondering why, more cooks don't do this in their videos.

My 11 year old just made this cookie dough for a school “food truck” day. He picked a “Christmas food truck” as his. He will be taking them to school on Friday. We will be topping a cheesecake/red velvet cake with these! Also making gingerbread houses, and snowflakes as well. I’ll come back and tell you how it goes. I did taste the batter and it was delicious. Letting it chill over night and baking tomorrow evening💕 thanks for the recipe.

When I make royal icing, I normally use dried egg whites. You can get that in any grocery or supermarket. I add 2 TBS water and beat it; then add 4 more TBS water. I then continue to beat the dried egg mixture until frothy, then add 1 to 2 cups of confectioner's sugar, a Tablespoon at a time, then beat until stiff peaks form. You can add 1teaspoon of vanilla extract before adding the sugar. This Royal icing can be thinned with a few drops of water to get it to the right consistency.

Hi. My dough was incredibly sticky. I checked all my measurements and live in a dry environment. Plenty of flour on cold counter and pin. Discs chilled all night. Was only able to get two or three cookies cut out before the dough started adhering like crazy, then back into the fridge for re-chill. Any suggestions? Maybe an extra half cup of flour next time? Less molasses? (also going to try the less leavener, sharper version w/corn starch next) Thanks 😊
