Hi, Jun. I just want to reach out and tell you I received your book “How to Make Sushi at Home” from Amazon today. I looks terrific and has tons of pictures which most people truly appreciate. Thank you to both you and your wife. I’m heading straight to the Sushi Rice chapter. I see you have a Sushi vinegar recipe immediately following it. 👍

I also wanted to say that the photo on page 145 of the Shrimp Tempura Roll was mind blowing.

One of my favourite dishes. I love tofu. I made dashi today but didn't have ebi tempura nor tofu nor the time to prepare eggs, so I just had the saddest kake udon with nori T-T and now this appeared on my recommended so I have some use for the leftover dashi.

Yes, dashi can be used for so many things, always good to have in the fridge. Definitely try it out and let me know how it goes!

@@TheSushiMan I bought tofu but my store doesn’t have potato starch anymore 🥲 so it’s still an incomplete dish but close enough haha! Next time I’ll make it properly

Daikon is not available where I live. If there is no substitute to be found at Walmart, can I omit it?
@TheSushiMan9 ай бұрын
Hi Jeanette, you can leave it out, it'll still taste good without it. However if you can somehow find daikon then I highly recommend it. I've never personally tried and it might be a bit spicy but maybe turnip or red radish will be a good substitute? Let me know how it is if you give it a try!

Why not use a tofu press to get excess water out ?
@Foxie6354 ай бұрын
I like to use a plastic bag to coat the tofu, works really well.

He is great and I love that he gives background on the dish, some people like to be educated and knowledgeable and what they consume…not sure why your putting the man down I don’t see you putting yourself out there? Trying to teach anyone anything.
