I also spoon drops of the "syrup" that's left over from the cooking process into the sugar so it doesn't go to waste. It hardens enough to pick them up to eat. The drops aren't as "hot" as the ginger is so it makes a really nice, tasty treat.

If you steam (aka pressure cooker and steam basket) the ginger (like tomatoes and apples), then allow to cool, you can finger slide off the ginger skin, without all the fussiness of scraping or shaving. Then with a mandolin, you can shave the thinnest slices that are then boiled, with less boilings, and dropping into the ginger candy syrup. Then put out a waxed cookie sheet, and sprinkle with crystal sugar and (sea) salt, toss on the slices, and again sprinkle with sugar and salt. Allow to cool and dry for a very great taste sensation.

My son is getting ready to start chemo and I was searching the internet for ginger chews to buy for him, but, they are so expensive! Then I searched youtube for a way to make them myself and came across your video. I've missed you. You have been gone for awhile. I love your videos and I am going to make these for my son to have when the chemo makes him so sick. I appreciate you so much! Before coming across your video I read through several recipes and they use corn starch and I know my son would not like that. But, the sugar will taste good to him and hopefully the ginger will ease his stomach. God bless and thank you so much!

I slice the ginger, place it in a pan of water, boil it, on the stove, then use that water to add to my tea bag for my cup of tea. I can use the same ginger about 5-7 times. I do not use any sugar. Host Defense Turmeric Immune Tea. Love it!

For the diabetics out there (or folks who are watching calories) you can put the ginger into a dehydrator instead of into sugar. If you don't have a dehydrator simply put the ginger slices on a parchment-lined baking sheet and set it in your over (no heat) for a couple of days or put it on bakers' drying racks so there is air flowing all around it and leave it there for a couple of days. Not as much fun to eat as the sugar-coated variety but DEFINITELY worth the effort!!!!!

I have a jar full of peeled ginger ready to make candied ginger. I usually do at least once a year, sometimes more. Ginger has doubled in price at my store this year!! I always save all the liquid from the boils. I took some to a friend whose hubby has tummy troubles. I remember my mom using ground ginger in black coffee for that. Why not a bit if the "juice" from boiling it to see if it helps. It helped my daughter in law. I told my friend, and she's going to try to see if it helps. I had boiled the peels and stubby parts for her. I love candied ginger. I have somehow caught a nasty cold, so it will have to wait a bit, but it's already started so won't be that hard. Thanks for all of your wonderful help. I've planted the starts several times, but the squirrels have destroyed it!! Happy New Year, Christa!!❤🥰🥰

Also, I wanted to let you know that if you cook about a cup of honey slowly on low on the stove with a large piece of grated ginger - maybe about 30 minutes or so - it makes something that it almost like a ginger marmalade!! First wanted to say how much I enjoy all your videos. I have changed up the candied ginger. 1/2 cup ginger water, 1/2 raw sugar, 1 cup raw honey. After the ginger is nestled into its sugar bed I take the ginger sugar water and put in orange peels. Cook them just like the ginger and put to rest in sugar over night. Yummy. My kitchen smells great!

Candied ginger was my best friend while I was pregnant! Ginger alleviates nausea fast. When I was hit with morning sickness, which was frequently, I would just eat a piece of candied ginger and felt so much better within just a few minutes. If any of you have morning sickness or just general nausea, try it! I’ve heard it’s even great for motion sickness from car or airplane.

Hi Christa, Non-GMO Xylitol may be a good sugar option for those of us who are diabetics. On a show called Go Healthy For Good, Dr Nerida McKibben mentioned that Xylitol not only as a very low GI of about 7 as opposed to sugar's GI of 100, but it has the effect of helping your body deal with blood glucose levels more efficiently. I have Type 2 diabetes & now use it in my coffee. I don't like Stevia's aftertaste, but Xylitol looks & tastes like white sugar! You may need to use a touch more, as it's ever so slightly less sweet. Xylitol is made from Beech trees or Corn (non GMO). Unfortunately about 4 times more expensive, but it's worth the expense for diabetics. Thank you for being conscientious enough to include your thought towards diabetics. You really are a treasure!

I have been growing ginger for fives now and I never have thought of making candied ginger. I was just pleased to grow it. I will definitely will make some candied ginger. My grandma used to boil raw ginger in Coca Cola as a remedy against colds and the flu with fever. She wrapped a blanket on me and had me drink the concoction. It was a very spicy drink that made me perspire. I fell asleep and when I woke up the fever had broke and I felt better.

I learned to love candied ginger when my father was stationed on Taiwan in 1958. I still love it. My wife and I would buy it to settle our stomachs when going out whale watching out of a port north of Los Angeles. I never get sea sick, but it was a good excuse for some candied ginger.

I followed your recipe and the results were outstanding! I took the water that you cooked the sugar in and stirred it back into the boiled ginger water. Then I reserved it to mix 2-3:1 sparkling water:ginger water. The candied ginger was amazing and the drink (I prefer 2:1) is delicious and mildly sweet. I read that honey and cinnamon can help with the glycemic index.
