Thanks for this terrific recipe Bettie. I really like to use weight instead of volume when possible... so in weighing out 295 ml of egg whites for this recipe, I've found them to be (by my kitchen scale) very close to an equal amount in grams, (300) by weight, for those viewers that are interested. So close that it absolutely doesn't matter if preferring to measure by volume.

I love making angel food cake. Since it requires a low protein flour it works great with gluten free flour instead of cake flour for anyone wanting a nice gluten free cake.

I enjoyed this video- very clear and easy to follow- will definitely try your methods next time I want to make angel food cake. Question: What is the difference between cake flour and pastry flour? Can you use pastry flour for this recipe? Thanks!

I'm so glad you enjoyed the video! Cake flour and pastry flour are fairly similar but cake flour has a little lower protein content and it is much more heavily bleached than pastry flour. They can typically be used pretty interchangeably.

Hi, my first try a week ago came out perfect.in that recipe i used a teaspoon of cream of tartar, today i used one and a half teaspoon as recipe says 7ml...my cake came up to top af pan and then slowly went down..could it be the cream of tartar?

I found a funny item in historic recipes from Germany: there are two types of cakes, the "golden" cake (Goldkuchen) - using the egg yolk - and the "silver" cake (Silberkuchen) for using egg white, which is very similar to Angel Food Cake. A good housewife would never waste any fine rest of ingredient.

Sure! To store, wrap the completely cooled cake well with plastic wrap and keep in refrigeration for up to 1 week. It is best eaten within the first few days.
