I always enjoy watching your videos! I think it's "rise" not "raise". "Raise" is to move something in an upward motion (example: Raise a glass. Raise your hands!) And "rise" can be used for bread but also has other meanings. Thank you for your advice on how to bake such a delicious bread!

I hadn’t had legit focaccia since Santa Margherita Ligure, and your recipe did the trick! I took it to a party with some of my Italian friends, and and they agreed this was on point! Interesting. I will try this. One observation. Others have shown off their interior as being light and soft and airy. Their proof is the examination of the interior as being full of air holes. With yours the emphasis is light, soft but with a moist interior. It seems dense because of the lack of air holes. But it’s not dry because its filled with EVOO. Is this observation correct?

I encountered issues with my dough turning out too dry during the mixing process. I live in a high-altitude area with exceptionally dry air. After conducting some experiments, I discovered that to achieve the same dough consistency as Vincenzo, I needed a total of 300ml of liquid (a combination of water and olive oil). I opted to add 100ml of olive oil initially and followed it up with 200ml of water. My wife suggested that perhaps when Vincenzo adds the olive oil in the first step, he might be using 100ml or more. Vincenzo, you haven't specified the type of flour you use, but you do mention mixing the dough for 20 minutes or more. I assume you're using all-purpose flour, and the extended mixing time likely helps develop the gluten in the bread. If you are indeed using all-purpose flour, you might want to consider trying bread flour, which has a higher gluten and protein content. This could significantly reduce your mixing times. I am currently in the process of testing both options.
