I think you used one cup of milk instead of two, I did it, and it went wrong; I had to add extra flour and so, because it was too liquid, could you please help me to figure out what happened? Please?

I’ve been trying to perfect my belgian waffles for quite some time now. They always come out too soggy and I want them to be like how they are in the restaurant. Ok, I gotta be honest. I have a Belgian waffle recipe that I have used for years and years (so much so that you know it by heart and you don’t have to measure), and I am switching to yours. MAN! This was really really good and soooo much easier than my “tried and true” recipe. I already knew to whip my egg whites to stiff peaks and fold it in, the only other difference is I add about 3 T of cornstarch to mine (it makes it crispier). Some people suggest putting them in the oven on a low temp for crispness but I have hungry teenage boys who don’t care about the crispness of anything, they just want to eat waffles. Thank you so much for my “new” easier “tried and true” 🥰

Awesome William, I am so glad you made them and liked them!! One thing that is nice to do is to make the full recipe, then individually wrap the leftover ones in plastic wrap and freeze them. Then just pop them in the toaster when you want them. That is what I do, I live alone so I am regularly making this recipe for one person as well.

You are welcome! Any leftover batter can be stored a day or two in the fridge. I don't recommend freezing the batter. Better to make all of the waffles and then freeze the leftover waffles. Then when you want to eat one, just pop it frozen in your toaster. Works great.

Awesome! Also this video is pretty old, you don't have to whisk the egg whites until "stiff peaks" just until frothy which is what I showed, even though I misspoke and said stiff peaks, haha. Although you certainly can whisk the egg whites longer if you like. Let me know how they turn out once you try them.

I am from belgium... and there are a few differences I think. or at least how we make them at home. get the egg white more beaten, if you hold the bowl above your head, it should stay in place. This gives the waffles the 'air bubbles'. and you mix the egg white into the batter, with a spoon with a hole in it. That way you don't destroy the air bubbles.

Hello! Yeah these are "American" Belgian waffles, haha. Yes for sake of time for the video, I didn't beat the eggs long enough, and I was too lazy to get a spatula to properly fold in the egg whites, haha. At any rate, they still come out super light and fluffy. This is also one of my older videos, in my recent ones I don't short cut the techniques haha. Awesome! If you want it even lighter beat the egg whites to full stiff peaks, not shown in the video, I showed them as frothy, which is fine, but they will be even lighter if you get stiff peaks and then fold that into the batter. To get them crispier yes you are exactly right, just cook them a little longer. :) Let me know how they turn out! Hi Matt, this recipe is amazing. The result was so delicious. Thank you very much... However, the recipes which are in the comment and on your website can download one is a little different. I tried both but my batter became more liquidised with the same recipe. I increased the flour from 240gr to 430gr, still, it wasn't looking like your batter thickness. What should I do? Shall I put more flour? Thank you for your answer from now on.

Hello, yes add a little more flour. The metric measurement could be a little off. I don't cook with metric, I use American Standard Cups. So if you have a metric conversion you like to use try that. It looks like the milk metric measurement is off though, it shouldn't be 500ml that is too much milk. It should only be 474ml. That might be why it turned out a little more runny. The flour measurement should be 240 to 250g as well. The website version is more accurate than what is on KZbin. :)

In The Kitchen With Matt I spent over 2 1/2 hours working on it after spilling some during the stirring, had to find a bigger bowl also tried the new waffle maker but didn't know I had to turn the handle to lock it before flipping it over so I had to start all over. Despite all the rewashing and forgetting ingredients, I managed to finish making them by 2:35 AM! I froze the batter last night and defrost it in the morning so I could let my great grandparents and mom try. They were completely amazed and said the waffles were delicious! Hi Samir, yes you can just double, triple, quadruple the ingredients. Unfortunately no, it can only be set out at room temp for 2 hours, maximum. Then it needs to be stored in the fridge.

@@samiral-rawas5847 Nope it wouldn't go bad if stored in the fridge. You can make a big batch, store most of it in the fridge, and only put out enough for like 8 waffles in a bowl, with a ladle. And when that bowl gets empty, refill it with more from the fridge, if that makes sense? :)

Don't forget to spray before each waffle. And you might want to try whipping those egg whites a little longer until they are more like whipped cream.

Hi Hilary! This video is super old. I meant to say frothy not peaks. And it depends on your waffle iron. Mine doesn't need to be sprayed each time. I have made this recipe many many many times.

@@ad8ration Are you using metric or American Standard cups? You can add a little bit more flour to thicken it up. But they shouldn't be really runny.

Hi! what is the brand of waffle iron that you're using in this video? I found a single circular waffle iron by Breville that is very good. Can you remove the plates from yours for dishwashing?

It's a Waring Pro brand. It is pretty expensive, I got it years ago. And yes it flips over. Breville is good!

No the milk doesn't need to be at room temperature. If the butter is too warm when poured in that can happen, but it doesn't matter too much, once all the ingredients are all mixed together.

It doesn't really matter. If you remember, room temp is a bit better, but you won't really notice a huge difference between two waffles made this way, one that was with room temp ingredients and the other that wasn't. Do don't worry about it. :)

Thank you, Sandy!! That is an outdated style by Waring which is most known for commercial quality products. A common waffle iron used in restaurants and hotels back in the day. I got mine for like $80 at Bed Bath and Beyond in like 2008. Awesome! This recipe uses baking powder, not baking soda :). Just start with a small amount and buy more as needed. But it does half a self life of 6 months to 1 year.

Hello Vera! You can try the first batch without the kitchen spray and see how it works. If it sticks too much, then I would use butter or some sort of kitchen cooking spray. :)

You can certainly try it, they may cook a little differently sine liege waffles are made from a yeast dough and this is a batter. But go for it!

You are welcome! I would just recommend times each ingredient by 10, depending on how large of a bowl you have to make it in. You may need to make the batter several times a day. Depending on how much you are selling. This recipe gives you 5 to 6 large waffles. It also will depend on the size of your waffle iron. If you times it by 10 you will get 50 to 60 waffles.

Ha ha! I didn't see peaks on those egg whites and that isn't "folding" but gotta give credit for this being the first video I found that actually separated the eggs and beat the whites. Peaks on egg white should look like cool whip or whipped cream when you dollop them onto the rest of the mix and gently fold so as to keep the waffle batter full of air bubbles.

hahaha yes, it is a very old video as well, I didn't always show complete steps back then, and I misspoke with peaks when I meant to say frothy. And you don't fold with a whisk either, but I was too lazy to get up and get a spatula. I also didn't realize back then how picky people are about videos, haha. AND, almost no one makes them from scratch, but the ones that are here watching a video on how to make waffles probably not their first rodeo in a kitchen. Not trying to sound picky just trying to be constructive. I try to add comments to comment sections of videos I appreciate. I've heard it boosts them in the Al Gore rhythm.

I understand the Waring Pro waffle iron you have, is the best, as it only requires a cup of batter, has a drip tray down below, in case the batter becomes excessive and it'll beep to tell you when it is ready to add the first waffle. And it'll beep again to tell you when each waffle is done. Are you a professional at this? I have to admit I cannot find this particularly waffle iron for cheap, not even on Amazon! I love your waffle recipe, even though I would use a modified version with buttermilk, instead of regular milk, nut flour or whole wheat flou and instead of sugar, I would use monk fruit sweetener, as it is not only much healthier and safer to consume than sugar, but also it has the exact same properties of sugar. Not that I'm on the keto diet or anything, but because I have type 2 diabetes. And even though I have diabetes, I am also am at risk for hypoglycemia. So to avoid blood sugar spikes, I use monkfruit sweetener whenever I can. I tried the sugar free syrups, that which are watery and make the pancake or waffle soggy! So, for that reason, I will use regular syrup, but I will use Vermont style maple syrup, but only enough to cover the waffle but not so much to drown it in there.

Yes this waffle iron is absolutely amazing. It is a shame they stopped producing this model. I bought it years and years and years ago at Bed Bath and Beyond, back then it was only like $80. But still that was pretty expensive for a waffle iron even 15 years ago. Yeah monkfruit is great.

I use cream of tarter in the egg whites for other recipes. You can certainly do that as well with these. Although they do stay pretty fluffy as is, even if you don't completely mix the egg whites to stiff peaks which I didn't show in the video, haha.

Hi Matt I noticed a small error in your printed recipe in the video. It calls for 1 stick of unsalted butter, but in the video you correctly state 1/2 stick of butter. Regardless, those waffles look amazing. I bet they tasted just as good. 😀

Great catch!! Yes it should be a half stick which is 4 Tbs. I think there may be smaller sticks of butter, but the most common here in the states for sure is 1 stick equals 8 Tbs or half of a cup. Thank you!!! :)

My iron doesn't have a temp it goes my numbers. I imagine the equivalent is medium heat, or 350 F (176 C) depending on the iron you are using. I hope that helps. :)
