There are two potential issues when making creamy coleslaw from scratch. One is cutting cabbage for coleslaw and the other is a watery coleslaw. Today I'm going to show you how to cut cabbage for coleslaw using a knife and how to prevent watery coleslaw. The perfect side dish for all your BBQ needs this summer.

The thing I love the most about your videos is you immediately show how it's done in a quick way before going into detail about what you used, it's really helpful for those of us who already do a lot of non-pro cooking and can watch that first part, and immediately know if that's what we want or how to replicate it.

Exactly!! And my recipes aren't what I want you to take away. I want you to take away the little tips and techniques i've learned along to way to make things to my taste. Hopefully it translates so that you can see what I do to make it taste the way I like so that you can figure out how to make it taste how you like!

I make slaw frequently (mostly with just red cabbage, though) and I think it benefits tremendously from a touch of shallot and Italian parsley. A nice twist is replacing carrots with mango, vinegar with lime juice and adding cilantro and fresh hot chili peppers - makes a great salad.

I salt and drain like you did and also squeeze the veggies in paper towels to get more moisture out. Like the combination of green and red. Yummy.

I really love this recipe. Celery seed is a great addition. For sweetness I sometimes use raisins or finely sliced apple or both. The honey is good too.

The Hellman’s in the jar is thicker than in the squeeze bottle. Also mustard powder adds a nice bite but no moisture. Recipe looks great !

I grow my own green and red cabbages organically. They have a peppery flavor when they're just picked. I make mine just as you do, but I'm too clumsy to slice like you. You have amazing skills. I love that you use mustard, which is the right way to do it. I take half of it and add raisins and dried cranberries, so one bowl is savory and one sweet. Also, the German word for cabbage is "kohl." Obviously it was "kohlslaw" at one point, probably until after the war.

tip: to get the absolute finest cut on cabbage, they use a commercial ice crusher (the kind at hawaiian shaved ice)........it's a six or seven inch diameter tube that you stuff ice or cabbage down with a rotating razor blade inside the housing.......used for snow kones and shaved ice........it makes the most amazing cut cabbage for slaw......creamiest I've ever had.

I’m going to make this on New Year’s Eve for pulled pork sandwiches on New Year’s Day. I watched this on my TV, and found the music distracting, though. That coleslaw looks amazing! Merry Christmas and Happy New Year everyone!

I made this slaw. OMG! Boy was it good. I was a little frigid about the mustard (used English mustard not the fancy one you did here) but I needn't have been, worked out so delicious🤤. Love your artistic presentation too. All the way from London, England.✌️

Your issue @3:00 with being too liquidy is the Hellman's squeeze bottle, less thick than container and definitely with restaurant mayo

A great video Steve! like all kinds of coleslaw, my personal specialty is a sweet and sour slaw (pickled) with no mayo, it's great for long days on the picnic table without going bad. I sold it in my stand all last summer. I might have to do a video but I've got a couple ideas for other summer salad recipes coming up. The problem I've got is so many ideas and not enough time to get them all done.

The trick is not to add extra salt , (there is enough salt in the mayo/mustard ) too much salt draw's out water from the vegatables , remember you can add salt at the table

@@EliezerRedlich I know the science behind it, I just don't understand the motive. Going back to my original comment, I like my slaw REALLY REALLY crunchy. It also doesn't last long enough to go soggy at all, so the excess moisture is a moot point in my kitchen. I've been known to go through 4 heads of cabbage a week because I like slaw that much.

Do the same with a big green cabbage alone. (Danish ballhead.) But no celery salt . Add one and a third cups each golden raisins and cashews salted toasted. Add McCormick hot madras curry powder or hot yellow curry powder; about one Tablespoon or to taste. I use light brown Dominos sugar instead of the honey on this. (I prefer apple cider vinegar always for Cole slaw & Dukes mayonnaise. It's just tastier.) The basic idea came from Alton Brown I think?.

I really like how you adjusted the amounts of the ingredients as you went on by adding a little more mayo and honey to go by feel and taste. From my own cooking experience, that took the longest for me to understand was that you don't just go exactly by recipe amounts. You need to go by feel and taste and don't be afraid to adjust if you think it needs it. So it was nice to see you do it in the video because it gives us watching confidence to do it ourselves when we cook.

Thank you!! I’m trying something different in this show which is trying to teach how to cook with your senses and feel and passion rather than just reading a recipe. I’ve long maintained recipes are inherently flawed. So relying on them is a losing battle. I appreciate you noticing that. It is quite intentional.
