I have just made this tonight for the first time. I halved the recipe as we are a smaller family and didn't want any going to waste. I also didn't have time to leave in the fridge overnight so I replaced that step with leaving it in the fridge for 30 minutes (the rest of the steps I did exactly as above). I have to say, this is the BEST bread I have ever made and the BEST baguette I have ever tasted! Thank you so much !

I had oven for more than 20 years, got cook book those days, but those texts never looked it workable. Now on holidays, I heard it many a time as time pass, just did a try followed by the watching videos, n it started evolving as I was an old Baker! Now I do a lot of permutation combinations, n endless variations of bread!!! Start this, n it's worth it. I started eating bread for a change. Time will get adjusted along with your work. Just start. Once you bake in batches, there is a lot of free time to relax n eat n serve for sure.

Sorry for the confusion. After 2 hours of proofing at room temperature, keep the dough in fridge. We can use the dough any where after 24 hours or up to 72 hours(3days) for best results.
