i dont think alot of people get that jerk chicken isnt made from a particular sauce but its the charcoal and the smoke from it that gives it the distinctive taste. it can be season with salt and pepper as long as you do it on a grill with char coal you will get that distinctive taste. Everyone have their version of what they think it taste like but majority of the time it falls short.

@@JohnUk65 go watch a traditional jerk chicken video, this is like a cosplay of jerk chicken. Best to marinate the chicken for a whole 24hrs not just 2hrs or overnight, also must be cooked over fire and smoked with jamaican pimento wood. That wood is what gives it the jerk flavour.

Far from Jamaican jerked chicken (home made or otherwise). We Jamaicans never brown our chicken then cook in a oven as a step in making jerked chicken. Also, we use a grill and we do not use cinnamon to season chicken ... Additionally, the seasoning is missing escallions, onions and pimpentos. It's not a bad attempt considering your not Jamaican instead of salt use soy also take the seeds out the scotch bonnet, add pimento and spring onions and grill is better so you don't use so much oil!! And whatever you do do NOT USE Worcester sauce!! Instead use pikapepper sauce or simple vinegar

My favorite chicken is a mix of wings and drumsticks on the barbecue until there is very little fat left and the skin is crispy, then I put it on the pan with some ketchup and hot sauce and let it sit there until the ketchup starts caramelizing. I put in quite a bit of hot sauce so it's pretty spicy and the ketchup is there for sweetness and thickness. I'm thinking of adding some ground garlic and chilli's or habinero's to the mixture. I prefer this over any chicken from take out places and once you are done with the BBQ you can just put it in the fridge and add the sauce the next day. Still delicious :)

I am Jamaican and THIS IS NOT JERK CHICKEN. Authentic Jerk Chicken and the best kind is marinated for 24 hours to get the flavours intense to a point they are just bursting in your mouth. A whole chicken is used or large chicken legs, not these micro tasteless drumsticks. But most important of all it is Charcoal grilled on a bed of pimiento wood. The taste is unmatched by these lazy ass jerk chickens I see floating around on youtube!!!

Not bad... go easy on the nutmeg and cloves.... heavier on the pimento (sometimes called allspice).. and throw on the BBQ instead.... but smoke it... you need the smoke to make good jerk... of course preferably smoke from pimento wood..

If you let the chicken marinate for longer than it take to turn on your pan. You'll be fine. The recipe is excellent. Use a little imagination for ingredients or steps you can't imitate and you'll be fairly surprised with the results you get from this recipe.

honestly garlic powder or garlic salt is fine. If you just don't want any garlic flavor whatsoever you can always add more onion or onion powder.

Not bad ... he made a quicker version. There's another guy that brined the chicken for 2 days before marinating I think. That slower recipe probably more flavorful tho. But Gordon's is quicker and simpler to do in the house.
