I've never seen jerk chicken with plum sauce before but I can see how the subtle sweetness of the plums would compliment the spiciness of this dish. I love how he showed gratitude to his grandparents and ancestry for passing this recipe down. Beautiful man this is.

Try and add some fruity flavor to your jerk paste because scotch bonnet has some of that that you would miss using red chillies for example.

Just do a quarter bonnet and add more in the blender if you think it's too mild. You can also remove more of the seeds for less kick, just make sure you're wearing gloves

I've seen cast iron grill pans, and always thought it strange to lower the contact surface area. "How do things cook thru with less contact?" But when he moved it into the oven, I realized that THAT is the key reason. I will be buying one now.
