oh my, so exciting, so delicious looking. I don't have a juicer. Can I make the okara by squeezing the milk out of the soy pulp, after blitzing it in the NInja? Also, do you have a cookbook?

I am so glad I found your video. From now on, I will keep my okara (from making soymilk). I made these mochi today. I don't have soy flour and the Psyllium husk so I substitute with wheat flour and sesame seeds... They are still delicious! Thanks for the recipe!

I’ve just made my very first tofu, from your recipe! Still waiting for it to cure. In the mean time I’ve tried these Okara Mochies, and they are heaven!! I did change flour to whole grain spilt and skipped the fibre, but it is heavenly dish! Thank you dearly for sharing this recipe:)!

Finally tried this recipe today (after making another batch of tofu!). While preparing the dough I wasn't sure how these would turn out - I mean the dough looked like yours in the video but how the results would be a little uncertain sometimes - I can only guess the texture by sight, cannot actually feel how soft it's meant to be. It felt a little dry and hard like play dough 😅so I added a bit more almond milk. I thought my okara would be wetter than yours because I hand-squeeze it, not by a juicer like yours. I added more seasoning - some cumin seeds and a few other Indian spices and a bit of miso paste but not a lot, when cooked, the aroma was great and they turned out really good. So pleased with myself, I ended up preparing the rest of okara (only about 400g!) ready to cook and into the freezer! I have precooked 4 of them now ready for tomorrow morning (will reheat with water in the morning) then 5 uncooked in the fridge standing by....and 22 of these in the freezer...will definitely keep me going!😆 Despite a sudden increase of soy product consumption, (from none at all for a long time to practically every meal) my body responded very well - after all, I grew up with a lot of them, it's like coming home...so good and very happy.😊 Among many of your good recipes, these okara ones have been such valuable additions to me. Thank you Fan. 🙏

These are seriously delicious, I used to make them even before consedering going keto to use up the okara from the homemade tofu (where I live is really hard to find it in stores, so had to make my own), I messed with the recipe here and there, add some vegan bancon and damn, every single person I showed this to was in love with it. Also, because I used fresh okara it had more moisture so I didn't need to add the milk, keep that in mind if your case is the same as mine. Btw, what are the nutricional informations or net carbs per 100g of okara, does anybody know? I tried looking it up, but to no avail.

Yes you can replace soy flour for regular flour if carb count isn't an issue for you.

The carb count would be slightly higher but it should work with coconut flour. Add in slowly and observe the consistency. Enjoy your first tofu making experience. Definitely more okara recipes coming x

I think I would like to try and make these but I don’t quite understand. Is it a bread? Or a dessert? Or like dumplings? And I can’t have this Luis off because it has wheat in it. Can you make this with gluten-free soy sauce or tarmari sauce. I am going to watch your how to make homemade tofu video. The texture is between a scone and a pancake. It's savoury and you can definitely use tamari soy sauce instead. Trust me it's delicious. It's definitely worth making tofu so you can get the okara :)

soy flour does not have wheat in it, it is just like a more processed okara. if you don't like tamari or gluten free soy sauce, you could also use coconut aminos or liquid aminos. i imagine you could make this into a desert by adding coconut flakes or berries instead of leeks. Then you could make the dipping sauce out of ginger, coconut cream (or coconut butter/mana or any nut butter), a small bit of lemon juice, and a bit of sweetener of choice. Perhaps with some maple and/or vanilla extract. A splash of nut milk/coconut water/water to make it runnier, if desired. Or a dipping sauce out of some ginger, lemon zest, berries and a splash of water in a pan until reduced till it is a bit syrupy. It could be a nice idea to season either or both with some cardamom, nutmeg and clove as well. Or topped with some monk fruit sweetened & toasted pecans/walnuts. YUM! Make sure you always add a little bit of salt to your deserts to make them pop! Adding lemon to both these sauces also adds a lot of pop and dimension.
