I made this for my boyfriend for his birthday. He loved it 💚 If you’re hesitant to try this out because it looks complicated, don’t worry. It’s a really forgiving recipe, and if you follow the instructions you really can’t go wrong! It comes out delicious and not too sweet.

I tried a few matcha Swiss roll recipes and yours turned out the best. Not too sweet and the cake was soft and fluffy. I added a bit of Anko to the filling and it tasted great. Thanks for the great recipe

Do you have any suggestions for high altitude baking? And would this work with gluten free flour, if it were a 1 to 1? Update: I did the same recipe at high altitude and with Pillsbury gluten free flour. It turned out just great. I did 14 minutes in the oven instead of 13, but the cake was cooked all the way through, and did not crumble when I rolled it. Perfect.

My family was totally into it. We know the matcha Swiss rolls from our livin in vietnam. It is truly as good as theirs. I used take matcha from Japan. Next time I will try ume or matsu powder.

I loved making this and it turned out nice but I'd reccomend just a little more sugar for the filling. I even used a little less matcha and it came out pretty bitter.

Can you give me more tips on mixing the egg yolk batter? I found I may be over mix it, the cake turned to be quick hard. I already added a little bit more milk after pouring the matcha & greentea powder, the better is still not good enough. I tried twice, the cake is a bit hard. I can't roll it at the end as it would be cracked. Thanks for any futher tips.

nhi nguyen cake flour IS the type. There is bread flour , all purpose flour , cake flour. Those are the main ones. Then there are other types like self raising flour , whole wheat flour etc. You'll get to know about all the types once you get into this 😋 Difference between all purpose, bread and cake flour is just : the gluten (derived from protein) Cake flour is higher in starch as well and has a finer texture (super fine... which is why it may also be called super fine or extra fine) which helps give cake/cookies that don't need to rise much a good tenderness Bread flour has more protein than all purpose which helps in gluten development Arrangement according to protein content from high to low would be : bread , all purpose and then cake flour P.s quick tip to know which flour you're using is to use a set amount of flour to a set amount to water Clumps fast/ not very sticky -> all purpose Stays sticky -> cake flour Bread flour is just something in between (might take longer time to become like all purpose but won't be as sticky as cake flour) Clumps after a little Umm I hope this info is still able to help a little 😅 and if not then uhh .. hope others get to benefit from it (ง •̀ω•́)ง✧

Thank you for sharing. I made one last night, it was soft and yummy. Please correct the measurement for the milk: 1/4 cup milk, not 2 tablespoons. Also I added a little twist to the cream, instead of using sugar, i melted 1/4 cup of white chocolate with 2 tablespoons of heavy cream in microwave , let it cool down a bit and combine to the whipping cream

Hi T. nguyen! Just want to make sure... I used 2 Tbsp milk as my recipe said, and did not add 1/4 cup milk. As always, I tested this recipe several times to make sure the recipe works before publishing it to youtube and blog. But depends on how the dry ingredients are measured/weighed, climate (dry/moisture), and each oven condition, it's possible that ones need to adjust the recipe. Hope this makes sense. :)

Hello, I tried to bake this but there was a hard, rubbery layer at the bottom of the cake. I noticed too, that I couldn't achieve the glossy egg whites despite beating it for about 5 minutes. Any advice from bakers?

I'm making this right now - house smells amazing when the sponge goes into the oven. Question: besides "time," how do you tell when the sponge is done? Mine has been in for 13 minutes, but it's still very squishy so I'm going to keep letting it bake for a bit, but for future reference, is it meant to be super soft or firmish or spongey or?

Spongy, if the sponge bounce back - springy, it’s done. Each oven is different so it’s best to know how it’s done like you said. Hope yours came out well!

Thank you Angie! I've seen both ways, so yes, you can do that. I didn't want to over mix the batter, so I added dry ingredients last to prevent from mixing too much (you can stop mixing as soon as flour is incorporated, where as you will be mixing again with egg whites if you add dry ingredients first). :)

mine developed a thick crust typical of normal cakes and could not be rolled, it cracked :( How did yours not brown? I did 190° celcius in 12 minutes.

Hi Kristel! I'd suggest to add maybe 1 Tbsp more flour? Matcha is light powder, so it's not an equal amount as flour.

I preheat the oven to 375 and baked for 12 minutes but the cake got burnt and turned black. The green tea powder clump together and doesn't give the vibrant green color like yours. What I'm I doing wrong ?
