Glad you liked it! You just have to always watch the caramel until it's the right colour for you. Once you've tried it a couple of times, you'll be fine!

I can never get my caramel to be thick enough when it cools. It is still quite runny. Could this be because I tend to use vegetable based spreads rather than real butter? Or is it a case of leaving it longer?

Cheryl G Good question. I've never made caramel with vegetable spread before but butter does cool to a more solid state than vegetable spreads so is preferable. However, perhaps experiment a little if you really don't want to use butter. I find if you leave the caramel on the hob for longer it thickens up the caramel, but be careful not to burn it.
