Great channel Mr Lim. We have few hawker places in Sydney, but I am quite partial to char kway teow: It was the first time I had oysters and Chinese sausage in a noodle dish I remember being amazed at how marvellously it worked. Have a great Christmas to you and all dear to you. This recipe is being shared with friends who love take away food, as it might improve their diets. You can but turn the temperature down to maybe 140 degrees Celsius for 30-40mins. Do check on the chicken regularly to make sure that it is not burnt cause the heating element is very close to the chicken.

You can try mushing up the softened cloves sans skin and make roasted garlic butter for bread or as a dip with a little olive oil

can we just use chicken parts instead (eg thigh bone-in) and how do we adjust the marination / roasting time?

You can, marination will still be minimum of 2hrs to 24hrs. As for timing, for example thigh, should be around 20-25mins in an oven.

So gonna do this. In fact i was thinking of doing this 😱🖐🏼. I used thighs for a similar recipe and brined it. Resulted in juicy chicken

I think you will need about 1.5hrs, at around 180 degrees Celsius, do move the chicken around in the oven occasionally in order not to burn the skin. Do use a stick to poke the thickest part of the chicken when the time is up, the juice should run clear, if not, roast for another 10mins or so. Do make sure that the chicken is out of the fridge and rest to room temperature before you start to roast it.
