Since I'm allergic to a specific milk protein, I've been making my own nut milk for years now. I have a little tip to share, that I found out over the years: if you blend the nuts with some cinnamon, clove or cardamom powder, the milk will last a couple of days longer. They act as preservatives and give an extra touch to your milk's flavour. ;) Great video! PS: Just a simple curiosity: did you know that "cashew nuts" are actually a fruit, not nuts? ;)

Haha! yes, a drupe actually, a bit like the kernal of a peach really. Peanuts are legumes, more like a pea, all of these are designed to confuse us! delicious though :)
@oONanniOo7 жыл бұрын
That is so interesting - I always add those spices but I had no idea that they would help preserve it. I would add that if you want a really cheap alternative to these milks that is still delicious, use oats - instead of soaking them, just bring the water with the oats to a boil, let it cool and blend it up. I also put in a teabag of vanilla tea while boiling which makes the milk taste amazing.

Gemma Stafford can you add vanilla extract to the almond milk to add more flavor?
@sharonlatour62307 жыл бұрын
I do add it to mine when I make it, a teaspoon or more, depends on how much you are making. I gives a nice flavor. I hope you don't mind me answering your question Taylor. :)

Great info. Thank you. Back when our oldest was little, she was dairy allergic. As it was expensive or sometimes very hard to get soy milk, I learned how to make it at home. This is almost the same process and you can make half gallons as easy as pints; it just takes a little more time to process in batches.

In my country, Indonesia, we use coconut milk for cooking. we call it 'santan' and there are two types of santan, thick and watery. we use fresh coconut that has been grind using machine when we buy it at the market then we soak it for few minutes then we wring and sift it. the first wring is the thick and the second wring (soak it for the second time) is the watery one. I don't know if it's important but I just want to share :D
@biggerbolderbaking7 жыл бұрын
hi Maudy, thank you so much, I am learning so much from you guys today. I did not think of a seconk soaking of the flesh, but it does make sense :)
@danielrenzbanaag95346 жыл бұрын
Here we use fresh coconut meat grinded with a machine then we add two 1-2 tbsp of hot water and squeeze the meat with bare hands until juice flows. It comes out thicker and creamier though you only get about a cup of it. The second straining is for the milk.

Gamma Stafford thank you for this video. Found a dealer online for the Milk Bottles and even the tops. Just arrived today was my brand new vitamins blender and also the small shipment of raw almonds (5#) which will get used for a few things. So, now it's off to your website I go for exact measurements and to soak my nuts overnight. I even purchased 2 nut milk bags from vitamins too and any left over almond meal I am sure will get used. I'm sure my food processor and I will make no work of making it finer after I get it dried out and then make pancakes from it if I can find a recipe. Thank you again

This may be a little random but you can eat soaked almonds. They are way less dry and taste wonderful. In Turkey you can get them on ice as a refreshing little snack. I believe they are called "Milk almonds" there because they taste so much more creamy and milky. I think it is really worth a try :)

A great nut to make a milk with, really rich, with very little pulp. Soak for a few hours to soften, and make the nutrients more available, and easier to blend too . 1 cup of nuts to 5 - 6 cups of water - lucky that you have these nuts, they are not everywhere :)

Hey Gemma I'm your really big fan, I have a request plss can you upload a video about how to substitute baking powder and baking soda
@biggerbolderbaking7 жыл бұрын
Ah! I am not sure what you mean by this! Most baking needs a 'leavener' to make it rise. This is a chemical reaction. Baking soda/bicarbonate of soda is an alkaline. In baking it is balanced with an acid, in baking powder this will be cream of tartar. when you use baking soda in a recipe you need to add an acid, such asbuttermilk, to achieve the rise in the bake. It has another effect in cookies where it tends to crisp things, think honeycomb! :)
