Such a wonderful video! Very well made and beautifully put together. No matter how hard I try, I can never achieve such incredibly light and flaky croissants. Awesome job!

The log before you cut it into smaller pieces looks amazing. I'd love to come home with a 2ft long pastry! haha. This video's made me so hungry, especially the almond croissant

Beautiful Kris! Do you glaze the pain au chocolat and basic croissant? if so, is it a simple syrup or like an apricot glaze? Thanks as always.

Hi Joe! we egg wash all pastries before baking and after that we glaze only pain au raisin. Croissants, pain au choc, danish - we don't touch anymore :)

hi, at the moment we don't use anything fancy, but i would recommend Rational or Combi ovens :)

Can you PLEASE PLEASE do a video of how to make croissant at home (and not spending your whole week for that?)🙏there is a plenty of this on yt but v.long + not saying much about main mistakes(so I will know what to avoid),what type of flour you should use(mostly wheat flour but what % of protein for ex.) . i guess there is a lot of small thing that are super important in the process of making it that you know and we(or I) dont :D xoxox

Hey! many many thanks for your comment! so funny - today on my to do list I have "to mix croissant dough"😀 i am working on the best recipe as to do it in a bakery and at home is different, don't wanna overcomplicate the method but i have to run a few methods (wanna make with poolish and without, different type of flour etc so it takes time😇) so stay tuned 🔔🥐 if you have more questions feel free to write them here :) have an amazing day! ☀️

@@brutalmadness9099 i am so used to do croissant at work so it is easier to achieve better result with the lamination machine, i did another day one trial at home so it is very different! But don't worry, i will release the video with the best version I can achieve at home:))

yes that's true, but when bakeries do large quantities everyday it's such a saver to use one type of dough 😇
