Assalamu alaikum. I know your question was posted 3 years ago but when I came across this recipe a few months ago I had the same question. I've made this a few times but I did not weigh it. I made it in the week again just to weigh it and it comes to about 2,6kg. Just posting this here in case someone else has the same question.

Pure butter, you can use any type

Depend on the weather. In hot weather I’ll refrigerate. Cold weather counter top works for me. Also depend on if you’re using margarine or butter. Margarine tend to be soft so I’ll refrigerate
