Sirene is a brine Feta style cheese produced in Bulgaria and neighboring countries. It is also known as white brine cheese or Bulgarian feta.
For production I used:
-5l of pasteurized milk at 65 * C for 30 minutes
-1ml cacl
-mesophilic cultures according to dosage:
Lactococcus lactis subsp. lactis
Lactococcus lactis subsp. cremoris
Lactococcus lactis subsp. lactis biovar diacetilactis
Leuconostoc mesenteroides subsp. cremoris
-1ml calf rennet 1: 17000
-50g of natural yoghurt
