This is how i make my dressing, except i add diced granny smith apple and ground sausage from this local meat market/butcher's. Brown the ground sausage, render fat. Sauté diced apple, onion, celery, bell pepper. Add 1-2 cups of broth in pot. Add box of stuffing mix. Cover until stuffing sets. (Use directions on stuffing box) Add crumbled cornbread into pot. Extra seasonings, broth, and a creamed soup of your choosing (mushroom, chicken, celery, onion) until desired consistency. Bake. Sometimes i buy the can of cranberry jelly with whole cranberries, and will put on a glove and remove the whole berries and fold them into dressing so the tart apples and cranberry mix nicely with the sage garlic sausage. Then i might juice an orange and reduce the juice on low heat. Then add the orange's zest that i set aside, right at the end before i turn off the stove. Let reduction cool, then add the jelly leftover after i removed the whole cranberries. Sometimes I leave a few berries in the mix. But its runnier and no longer held together like the canned shaped log of jelly. But i also buy a can of jelly without the berries. Shaped with ridges like people like.

I’m right there with you using butter to grease the pan. Even if I use olive oil to sauté the celery and onion, using butter on the pan gives the outer surface a wonderful depth of flavor. So good . In my family we often cook giblets for the gravy and the dressing. So tasty, but not essential. We season ours with some creole seasoning instead of adding a soup , and make ours with just cornbread, no bread or dressing mix(though both are delicious. ) Our family group is small enough that we don’t need mass quantities at the holidays. Thanks for sharing your technique about not overcooking the vegetables. I have experienced the consequences of overcooking them and it does make a difference. Happy Thanksgiving!

Disgusting. No self respecting southern cook uses box stuffing and calls it dressing. Where is the day old biscuits? Still not enough stock. That is going to be dry once cooked. All that butter is not needed. If you put the celery and onion in a blender with a little bit of stock and an egg, you don't have to lose flavor by cooking. And all that pepper and sage and junk is not needed. Doing entirely to much
