Taiji, I’m sorry that my thanks are so long overdue, but thank you very much for your recipe and tips. This is one of my son’s favorite foods, and so I wanted to make it at home since freshly made is always best. I have to admit I was a bit intimidated at first, but I bought an inexpensive pan as a trial run and followed your instructions. After a trip to my Asian grocery store, I was ready to tackle takoyaki. The first few tasted fine but looked ugly, but after a few tries, I got a lot better at it. There’s just something so comforting about the piping hot batter, tender octopus, sauces, and dancing bonito. I’ve made it often for the past year or so. Thank you again for giving me the confidence to try and for an excellent recipe.

I made it and it was delicious! The recipe worked. My take (for future self that wants to remember) - I doubled the recipe and mine yielded roughly 24 (my pan was 16). - I didn't use octopus (fishballs, cheese, and mushrooms were what I had. I just chopped them to size) and pickled ginger (I added some freshly minced ginger and a light sprinkle of garlic powder instead once the batter was made). - Instead of 2 tsp of soy sauce, I did 2 tbsps. - The water I used was room temp. - I added PLENTY of green onions. I had some leftover mushrooms, so I minced and added with the green onions. - I added roughly 1-2 tbsp potato starch (couldn't find cornstarch) - I added roughly 1 tbsp sesame oil to the finished batter For the oil (the one on the pan) I used a 1 to 1 ratio of sesame oil and veg oil

if you do calorie counting without sauces it's only 475 calories for takoyaki and that is with 10g of oil which is probably too much

I did this recipe today for first time and it turned out amazing!! The takoyaki was round and perfect, but it took me a long time to cook it, maybe I had the fire too low, but I didn't wanna burn it. I did not use nori, ginger and tempura bites, and I used 8 flour tablespoons. I put a bit of salt to the mix, and I used sunflower oil instead of sesame. It was so good. We finished eating it in 3 minutes 😂 I will try doing many and freezing them.
@おぽぽ-y3o I don't have tempura flakes and I don't have normal tempura neither hahahaha I realized that the inside isn't supposed to be hard, so it wasn't undercooked.

I really want to try and make these but before i buy the pan and ingredients, id thought id try ready made first incase i dont like them , i found a website called japan centre that sells in uk they have frozen takoyaki do you recomend these as some reviews say they taste mushy ? Thank you for any help you can give 😊

when I am back in Japan, I do eat some frozen Takoyaki. it really depends on how you prepare it. if you just microwave it, it will be rather soggy, although some people do actually prefer it that way as well. but if you put it in oven or even fry it, it will be crunchy. or actually the best way is heating up using this takoyaki pan, which in your case doesn't make sense, since you want to try it first before getting the pan... but of course not all frozen Takoyaki are as good, so id suggest to heat it in oven and try it. but you should also know that home made takoyaki is always better than frozen ones. or you can try finding Takoyaki in some Japanese restaurants.
