This flavorful Ghanaian black chili oil/sauce - SHITO pays homage to my mother's original recipe. The inclusion of the delicious beef and shrimp bits, allows this condiment to be used in a variety of ways, and compliments any dish that requires a bit of a delicious kick/heat. I've used it in vinaigarettes, also as a chili oil in a variety of soups, marinades, garnishes, dips, etc. A clever alternative to the authentic Ghanaian coconut oil may be a combination of canola oil or any oil of your preference, in the actual preparation, and then flavored with store bought extra virgin coconut when the SHITO is ready.
INGREDIENTS:
1000 ml extra virgin Coconut Oil (kube angwa from Ghana) or any oil per preference
1/4 cup sea Salt
2 Shrimp Bouillon Cubes
30 shallot onions
10 cloves of garlic
3 cups of blended ginger
2 pounds lean Beef
2 pounds Fresh shelled, de-veined Shrimps with heads off
1/2 pound Dry Red Chili Peppers
1 pound dried Smoked Shrimps
1/2 cup of tomato paste
