2 cups yellow fine corn meal
2 1/2 cups water at room temp
2 tbsp unsalted butter
1/4 cup onions finely chopped
1/4 cup finely grated carrots
4 ochros finely chopped
1 tbsp minced garlic
3 pimentos chopped
2 scallions chopped
1/4 tsp salt
1/4 tsp black pepper

It is so amazing how similar and different this dish is throughout the Caribbean. I know as a Bajan the name and method will throw people off. Other islands like Anguila and Virgin Islands this is called fungi. This method looks easier and you don't' need a cou-cou stick like you do in the Bajan version. Now I wish I had access to flying fish or salt fish gravy, lard I am getting hungry.

Thanks for sharing. I have seen it made in Kenya and it is called ugali but I recalled it being prepared with lots of vegetables, butter and coconut milk when I was young. It is a savory dish. In Kenya it is made of just corn flour and water. Today I decided to do a search "recipe for cooking coo coo Trinidad style" and I found your recipe. It was just as I recall seeing my mother and grand-mother doing. Thanks for sharing Natasha. You nailed it. 👍👍

One good thing that I got from your recipe that I haven't seen or heard of is soaking the corn meal and I think it's BRILLIANT! I will definitely give it a try tomorrow 😃

I hope this helps us appreciate the fact that we are one people in the Caribbean. Different names and versions of the same food . In Grenada they usually use the courser ground corn as well but I've never seen the okra or carrots added just coconut milk and aromatics. Delicious dish with some callaloo and stewed fish or chicken with plenty gravy 👌🏽😀🇬🇩

I jus completed this recipe. Perfection. I hve done this before and never soaked it and it still came out with no lumps, but this method is definitely easier. Yes Natasha 👍🏾

Oh my gosh!...this was the best recipe I've ever tried and it was so simple and easy to follow...my first time making coo coo, the method of adding the water to the cornmeal made it so much easier to mix in, came out perfect!!!👍🏼

I tried this recipe and omg it's so easy and tasty and nooo pressure with clumping. This is my new go to coucou recipe!!! I don't think I let it cook down enough though, it didn't set too good, but was still a bit firm and tasted just as great!

Beautiful! That's way I mix my corn meal, in cool water to avoid lumps. I like my okra in larger pieces, but your recipe looks fantastic. Great presentation!

Soak in water? Are you kidding me? I absolutely *LOVED* the result - just the way it looked alone and I ca bet it taste great too, so I'm about to try it right now because I had already seasoned 4 eight inch long Red Snapper last night with the intention of making Jamaican Escovitch but wasn't sure what to make with it- then Coo Coo came to mind, so Coo Coo it will be. Wish me luck.

U don’t hv to soak the corn meal. I love the different methods. Sauté the vegetables which. I love /. Then the coconut milk. /. The old fashioned way is bringing all vegetables to a boil eliminating the butter fats. Using a fork while adding the cornmeal slowly would avoid lumping off the dough

You can do that in butter the following day. I do that all the time! Put your left-over Coo-coo in the fridge. Next day, use sufficient butter to warm it up and you can fry it up in small sliced batches for better management when turning! ❤😊😅 I love 💘 to slice some pieces thin to get it crispy! Delish!!! 😋 😋😋

Ochro, coconut and butter are the most important ingredient in making coo coo... the other ingredients are optional..but with Ochro. Coconut and butter your coo coo will be moooorrisssh

Im happy that you mentioned that we can add whatever ingredients we like because when I saw CARROTS I was out. Because the next recipe I might see is FISH in D COUCOU ( which is actually not a bad idea, try it but don't do it 😆).
