I think the fish powder (Gyofun) is made by grinding up Bonito Flakes (Katsuobushi) in a spice grinder or mortar and pestle.

Hu, do you know where to buy the bamboo shoots? Also do you know where to buy hot stones to keep the soup got like at Tetsu in Japan?

you can ask them "GYOFUN(魚粉)" or "DASHIKO(出汁粉)

There is no need to strain the soup if you use a blender to stir it well :)
