I learned so much! Thank you Mary. Wanted to know how much fruit to start with if not using dates. Right now, I have some dried, raisin like cherries & also similar dried cranberries. Do you think the acid in these might be a problem? Would you measure them by weight or other? Also, does the container need to be a glass for storing in the refrigerator? I really want yo try this! Your bread looks so beautiful! Thank you for such clear instruction! Love your videos! Hope you keep doing them!

I wanted to know how much fruit to use for the yeast water in the first step & then how much more to add on the 2nd step-if you don’t have dates. I have dried cherries & dried cranberries. Also would the acid in these fruits cause a problem? I thought this is so interesting! Thank you for the clarity in your teaching.

The absolute best instructional videos on you tube! So much effort on Mary's part to teach all of us! Many thanks, you are appreciated!!! It is a sad world we live in today. More broken homes and families than not. So I, (like such a high percentage of people) did not have a home where I was taught to be a home maker, Many children in this world just survive! Then as adults, we are without knowledge of how to make a success of running our own homes. That's when boxed macaroni and hot dogs become "a healthy meal". But I am not knocking processed foods as many children would just love a hot meal ! I wish your videos were available to young women and young men in school. MIDDLE SCHOOL would even be a great age! However ... I am so happy to have found you a couple years ago. You have helped me gain so much insight and" know how". I am successfully cooking healthy meals for my family and I enjoy learning. You were a born teacher Mary! You are calming, and easy to follow. Please know your videos and your TIME that you put into making them, are having an affect on my life, as well as others I bet 😉. I love it because Im no longer worried about yeast all the time. I used 200gr yeast water and 200gr flour and put for 5 hours in a warm of place, then added 700gr flour and 200gr lukewarm boiled water and mixed it and kneaded it, covered it and out it on the counter for 10 hours and then baked it. It is so delicious. Thank you

Thank you, Mary! I followed your recipe for the water yeast, but using dried plums instead, and my first sourdough using it turned out awesome! And I used 1:1 ratio for the starter. 🙂 Stay safe!

I fermented grapefruit vinegar , cabbage coleslaw ferment and my family loved both!! I also made the citrus cleaning vinegar and my house smells beautiful! Ty for your tutorials and time! Still my favorite KZbinr. Oh I ordered your book!! Can’t wait until it arrives!! Next project I’m making sourdough starter vanilla extract and coffee extract! I love you and your lovely family!!

That's a great alternative to the traditional sourdough starter. I struggle with my sourdough starter in the beginning as well and the yeast water would have helped. I also learn something new from you. Thank you for bringing us along on your experiments.

Yes that's a really handy thing. I wouldn't want to go out and buy items for trying something but Mary gives us so many options! I do have to google the temperature every time cause in the UK we mainly use Celsius - I can't get my heat around 70 or 80F.

I’m so glad that you talked about someone using their boiler room. I keep my house on the chilly side in the winter ( WHO can afford heat) and I put my starter in the cellar on top of my furnace. Today it’s freakishly mild for a New England mid November day, idk how or even if it’ll work but I’m trying it. I even started a potatoes flake sour dough starter today. Keeping my fingers crossed. Homemade alcohol in prisons is frequently made with kitchen scraps, including raisins or other dried fruit. One of the old nicknames for it was "pruno." That's what I thought when you said it smelled slightly "alcoholic." Love your videos! Kepp up the great work!

Yes, I am one of the people who have not been able to find yeast at any stores for months, but thanks to you I have made my second successful starter. I killed the first one after successful 5 days because I ran out of flour to feed it. I have been using the starter in all my breads and I love the taste. Thank you for teaching the science behind the things. I just watched your video on to make a substitute buttermilk, and what you said at the beginning, was me, some people think that buttermilk is what you find at your grocery store. Didnt know anything about it. Hubby eats a lot of dates so plenty in the house. Thank you for all your amazing unique, original videos. And authentic.

I appreciate the honesty of the video...and the encouragement to experiment. It to have been edited to show everything perfect...but cooking is not always exact. I found that when I saved the leftover yeast water starter and fed it, that it really bubbled and doubled in size!! It was super active!! So give it a try! Love, Mary

I never had the idea that water yeast can be made out of common ingredients like dates, sugar and salt that most of us have at our homes. I have made yeast in the past often but it was more if a slurry then a yeast water which I find to be an easier yeast yo contain because if the mold problem as you mentioned Sort of reminds me of beginning Kumbacha. Looks delicious. Daniel's been going to sleep and waking up later and later as usual when there's no school. I of course have to match his schedule. We only got five hours of sleep before having to pick up his school breakfasts and lunches. This time they have us two boxes and two half gallons of milk. Guess it's supposed to last until the 15th when his work is supposed to be completed by.

Mary, You a most enjoyable to watch....Learning so much. I have the Busy Mother's Sourdough Secret in my favorites and the Yeast Water...for later use. I have been successful in making a strong sourdough starter and have that Alive and Well. Got my original starter from a friend in California in 2016 and have been baking only Sourdough Breads since. You are adding knowledge to my Sourdough Trip. Thanks for sharing.

Hi Mary! I’m pretty new to baking bread. I am having so much fun learning from you! I follow right along with you when preparing the cough. I made the yeast water like you said and it’s great. My problem is that my dough didn’t rise up…it more spread out. What did I do wrong? I really want to get better at making sourdough bread.

I used to make the best Amish friendship bread. I don’t remember the recipe but I remember putting the starter on the counter and adding 1 Cup Sugar, 1 Cup Flour, 1 Cup Milk every 5 days for 10 days. Stirred it every day. At the end of 10 days, I took 1 cup for my bread recipe, and gave 1 Cup starter to a friend with directions on how to do their starter and the recipe for the friendship bread. Or if I didn’t want to bake the bread I gave both cups away. The cup that was left I continued to add the 1 cup of each milk ,sugar n flour to start the process over again. The recipe had one box of dried vanilla pudding mix and the pan was greased and covered in lots of sugar before adding batter to the pan. The batter was like a cake and was the best cake/bread I ever tasted in my life. Everyone begged me for some. It had nuts, I used walnuts. Maybe bananas but I don’t remember. If I find the recipe I’ll share it with you. I’ve moved many times and had no room, went raw vegan a while and gave just about all my recipe books n papers to my family. I’m not sure I still have them or they could be in storage. I’m so sorry, I wish I could remember. But basically make it like a homemade cake but use the starter n pudding n sugar the pan. Fattening but wow was it amazing! Nobody could stop eating it. And I have the best cheese ball recipe that is to die for and a homemade pumpkin bread I found that has kicked all the rest out of the ballpark. I could share what I remember about the cheese ball: it was 2 cream cheeses, 2 packages sharp cheddar cheeses or whatever kind you like. 2 to 3 TB Organic Worchestershire sauce and I think 1 TB lemon juiced, 2 to 3 green onion chopped, 1 to 3 TBS green pepper, may roll in walnuts or any kind of nut but I skip that part. Serve with various crackers. I only used triscuit ( non GMOed) and organic round buttery crackers cuz it’s all I could find that was organic or at least not GMOed. The walnut pumpkin roll I can’t remember the recipe, but it was moist and good, I cut the edges off before rolling it. The filling I think was butter, confectioners sugar and cream cheese. Boy I wish I could remember. Maybe there’s one online but everyone’s I ever tasted didn’t compare. Thank you for your videos. They are fun to watch. I mostly make raw vegan but at times I bake flat breads n crackers and have a bit of the cooked foods once in awhile. I wanted to ask, why do you have 2 coffee pots? Is one for tea? Or do you have lots of company?

I think that maybe taking half to one cup of the Recipe flour out when mixing,might make the bread a little lighter since you added an extra cup to the starter. Great idea about the yeast water. Thanks for sharing it

Thank you Mary for this lovely video. Your friend Heidi makes something like this at her channel Rain Country. She calls it fermentation starter and has a couple of videos on making bread with it. Thank you for teaching us this skill.im wondering if we could bake with Kefir too?

The folks at "Cultures for Health" say that you can make a sourdough starter with any type of fermentation and it's really a matter of finding what works best in your kitchen. This is great to know! I love your videos. I just seen a video on potato yeast. Peel, cook, (boil) 1 potato, mash in its water, add flour & surgar, set out to capture yeast..?.. and its ready to go. I never tried it yet but thought you might like to investage it and try to help your beginers who have problems with their starters. (That is if it comes out good) Oh, that busy mom's starter is great! Love to learn all the different ways to make bread!😉 keep up the great work there lady!

The hootch should always be stirred back into the starter. You can also add 1 teaspoon of baking powder to further facilitate the rise. And you can use some of the starter mix in the making of pancakes, crepes, corncakes, etc. We used to store unused sealed batters in the fridge for a later use. The fragrance will offer up a slightly fermented smell. No problem. Following your recipe and using some starter will yield fantastic pancakes right on your stove top. Great flavor! And the breads are wonderful.

I can't do like that, but I have yeast water made of raisins,I make a dough using the yeast water and plain water,sugar and oil and leave it overnight,in the morning I add butter, cardamom and sometimes some ground nuts,or some flakes of fried coconut.... Then I mix the dough again sometime I add some more flour to the dough to make it fit for baking. Then I fry bread after cutting in desired shapes...this requires some good amount of oil,overfrying(dark brown) makes it harden the top layer,but frying to light brown makes it soft. The bread becomes real good,but it is like the same regular bread that we buy bread, except the flavour is different.... I would definitely love some thing you show but I don't have an oven... Hope this helps to someone who is struggling to make simple..bread.

Hi, I use a master bread recipe weekly. We use 13 cups flour, salt and yeast. I was afraid to stir the salt in. However it works with no problems. We stir the warm water yeast and salt. This sits in fridge until. I bake bread daily.

Hi Mary I made my starter with whole meal flour and use less water and mine came out nice and bubbly but I like what you said about preserving your leftover starter in the fridge and feeding it once a week but I would like to know how would you preserve it for a longer time if you don’t want to bake during summer with out discard or do you think it is better to discard some once in a while ps I did my fruit water with sultanas and did exactly like Pablo it came out nice 👍 thanks for your videos

Hey Mary, I'm so impressed with this yeast water, I've just made the starter, and within an hour I have bubbles forming, not just a few, I have a lot, can't wait till my 16 hours are over, so I can make a loaf, thanks again for the great receipe, I'm stoked 🤗😁

Thank you for this video! I made the yeast water, and I made the starter 6 hours ago only I just made 1/4 of the starter recipe, enough for 1 loaf. It's already getting lots of bubbles. I'm just curious if you know what would happen if I put more starter in the recipe? Oh, I made your no knead bread, and it turned out great, and now my neighbor is going to make it.

Great vid. I believe adding salt provides mineral to the environment and helps with pH levels and could fend off bad microbes from establishing in the yeast culture. Also the 1:1 ratio with a cup measurement will mess people up w/ a starter. Pro Bakers measure using weight and g = mL so differences in liquid volume and flour weight are nonexistent.

Thanks for visiting and for the kind words. Yes, I understand completely about the exact measurements but I try to make things easy for folks because I never want the lack of equipment (such as a scale) to hold anyone back from being able to make traditional foods. Someone like my mom, for example, just had a cup and a bowl and made great sourdough bread. Overtime, home cooks get a “feel” for how things should be made. @@MarysNest Yes, Mary, we've made them all! We're in our late 70s and have a large garden & flower beds, also still do a lot of canning & freezing - there's nothing like your own. Sauerkraut (sp?), yogurt, we've done them all. Thx for including so many links - it expedites the time spent here!

If you're having issues getting your sourdough starter to start add whole wheat flour for at least one of the feedings. It will take off. After that you can use whatever flour you want and it will do well.

So interesting. I’d like to try it. I have my doubts, but if it is good and works, it would’ve so nice to be able to make artisan bread w/out yeast. I would have to have fresh butter in the slice....taste it.....then add homemade raspberry jam. That would make any bread taste good.

Definitely check out Pablo’s channel to learn more. He’s very interesting. I had my doubts too. The bread does come a little denser than traditional sourdough so I think an overnight rise could really do it a lot of good. I look forward to experimenting. Love, Mary

I know that when making pickles and pickling things salt is used so maybe that is why it doesn't kill the yeast. Different types of fermentation yeasts? Just my thought, I may be wrong.

Mary, I love and so look forward to your videos. Being a bit dense is something I freely admit to. OK here goes. Where does the yeast come from, is it naturally occurring on the dried fruit?

Oh Steve!! You are not dense at all… That is a great question. Yes, the yeast is naturally occurring on the fruit and then it eats the sweetness from both the dried fruit and the sugar to multiply. Hope this makes sense. Love, Mary ❤️🤗❤️

Just a quick note from a decades long aquarist - most municipal water systems don't use chlorine anymore. They use chloramine which doesn't evaporate off. This is why they use it, they don't have to add an excess to ensure the right ppm is getting to the end user. What they put in is the same amount that comes out of the tap.

Hi Sharon, That is a great question. I didn't get a lot. I think this dough would really benefit from an overnight rise to lighten it and hopefully produce a better oven spring. But I definitely look forward to experimenting with this. Once it's made it seems very easy to work with. We'll see how it works out. Love, Mary
