this is the traditional way of hand mixing.only the god murugans temples will gives the prasadham. don't confuse the diffrents between the traditional and hygiene. it means they wash her hands properly before start the process.

Mam... Thank You for sharing these traditional recipes in the authentic style. Persons can modify as per their comfort level. A friend gave me some panchamrutam from Palani Temple in September 2021. It's made in the traditional way using the hands. I'm still using it as a spread on my toast instead of jam ( March 2022). It in perfect condition and is stored on my grocery shelf. Traditionally they used hands for mixing or mashing the fruits in olden days . Which had a good taste . Nowadays trend became little hygienic with spoons and machine where u need to sacrifice some taste .

Hi Vaijayanthi you can wear glove or whatever is comfortable for you. For cooking normally everyone uses bear hands to feel the texture, be it western or Indian culture. Asking for too much for online recipes. Everybody has their own style of cooking and comfort level.
