I love seeing how different artists use the same tools in different ways to create the same end result. I'm a portrait artist and I only use Illustrator for my work because I like having the ability to scale as small or large as I like without loss of quality and I use all of these tools but in totally different ways. I like to watch because there's always something new you can learn; a new take on a technique you thought you've mastered just to find out there's a more efficient way or one that produces a better result. When I select all lines and do Expand Appereance->Merge->Then Add the color with Rectangle tool->Arrange ,send to back->Select all , then Merge-> Isolate Selected group-> and delete it doesnt come out the way like how it comes out for you in this tutorial. I agree with you and the art on the internet culture is in a weird place. Its funny that people consider work like wats in this vid a cartoon when a cartoon really is more like a stylized caricature. and its funny how people get fooled into buying photo edits and filtered shit. But i try to not hate those people. They can develop skill and style like this youtuber . We all have different goals and i personally try not to convince them that my idea of what makes a good artist is whats real, unless they ask. I try to let my work talk and if i build an audience that wants me to talk about this shit then i will but we all just got to do a good ass job.

When I have Isolated ang colored it already but I didn't notice some of the lines doesn't stick together and I cant color it. What should I do??

I always keep a "raw" copy of the line work layer, which I dont "expand appearance" and dont "trim" in order to have a chance for correction for those unclosed lines. If you already expanded and trimed, you can draw new lines on the same layer to close the gaps, than re-do the "expand" and "trim" steps. It should work this way. Cheers!
