A Northeastern Indian meal typically consists of rice, fresh vegetables and definitely meat. Unlike the mainland India Northeastern platter has a lot of meat in it and we love our meat.
We make use of meat in both fresh and preserved form. Meat in Norteastern villages are normally preserved smoking them over the wood fire. This process not only aids in its preservation, so that it can be stored for a longer period of time, but also adds a nice smoky flavor to the meat. There are many delicious mouth-watering dishes that is made out of smoked meat.

Thanks for the upload. Boiling the meat prior to smoking will hasten the process by a huge margin. Covering your sieve with a tight weave basket or 'dala'(round flat bamboo item for winnowing rice) will help the smoke penetrate the meat. The type of firewood used will also impart their own distinct aromas. Sawdust or rice husks added to the ambers will increase the smokiness which lasts for a longer time. Keep up the uploads. You're doing fine.

maam, my fiancee send me smoked wild boar and beed and parceled me through post which took 15days to reach me and i noticed white layer over the smoked meat .. Has it gone bad??

In Mizo style..... We used wooden or iron stick and insert the meet and hang it over fire and the whole process took only 3or4 hours... I think this method is better because as the meet doesn't need to hang over fire for a long time the meat is much healthier as comparing to the method u showed...because mizo style would contain less tar....

lalduhthlana Geo even we do the same thing. I guess using wooden or iron stick might get less tar on the meat. However, since it's soaked in warm water before cooking, the tar gets washed away :)

Using skewer is most common method among the mizos but if you want to smoke it better you have to wait 3 to 4 days

The only inconvenience doing this in an urban area is the long smoking period involved (several days). In villages there is plenty of firewood and open areas where one may do this quite easily.

Hi nambi !! I dont know about others but i have got better idea to smoke my meat..that too around 30 kgs at one go...which takes about 3 to 4 hours to smoke..I have built myself a homemade "meat smoker" . I wish i could show it to you. I made it from an old steel closet..made modifications to make it airtight...added a chimney..it works great..and it cost be about Rs.2000 to make it..

Krishna kamal Barman whoa 30 kgs at one go. That sounds awesome! It has commercial applications. You should seriously consider commercialising it. Lot of people might want to buy it. As for the method I showed in my video it's for producing smoked meat with small quantities of leftover extra meat for use at home.

I guess the tar quantity is in negligible amount, on top of that the meat is washed several times, sometimes even soaked in warm water for a while before being used for cooking. All that removes most of it. People in villages have been for ages curing, preparing and consuming meat this way. To my knowledge no one in my village has even had any health issues due to it. However, smoked meat in general is said to be mildly carcinogenic, eating it in moderation is the key I guess :)
