Before my buddy became a vegan we used to make bologna burgers with good stuff from Canada, pretzel buns, and German seeded mustard. They were guud.

In Italy we call that big sausage "MORTADELLA" and has circles of lard all over inside. A lot of garlic and the original version even whole pistachios inside. It's originated in the city of Bologna, so that the reason you call it in such way. Epic Pit Boys!

jdwaynes1980 we discovered this method quite by accident. At the end of a "low and slow" cook, we forgot about leaving some thick slices of bologna on the smoker. Found them 3-4 hours later and they were still moist with that smokey good flavor. From there, we started cutting them 1.5 to 2" thick for even better results.

I am from the South but I lived in PA for about a year and a half. I love Lebanon Bologna!! But I'm back in the South now thank God!! LOL. Lebanon Bologna is hard to find down here. Apparently Lebanon Bologna is one of the worlds best kept secrets because it is damn good in my opinion.

We used to call these "Newfie Steaks" in Canada ....... made with the finest (it's not cheap) waxed Bologna ... for example "Mortadella" is also bologna (baloney) ....... we can buy fine waxed Bologna at every grocery store up here ... with waxed bologna (you know about that) the casing is over covered with a1/4" of plain paraffin wax ... handy to keep it fresh, with no refrigeration ... you could keep it in your back pack for three or four days while hiking before opening it !

it's great and simple to do.. get a whole or half loaf from the Deli and let er rip.. pull it off the grill or smoker when you like the way it looks.. it's pre-cooked of course..!

I never thought of Bologna as a gourmet food until today. My Grandma used to take Bologna and grind it up like you would beef and make Bologna salad kind of like a tuna or chicken salad but she would do a Bologna melt samich in grilled texas toast. . .Man was that GOOD. . .
