Andy you just made my day! I love your channel. Im a mountain/forest/bushcraft guy myself but my wife is a beachfront hotel lay in the sun all day kinda gal. After having her watch some of your videos with me I finally got her to go on a week long camping trip up in the Adirondack Mountains here in upstate NY. Just me her and the dog. It was magical and she is swaying towards the woods over the tropics lol....i will also say we ate some amazing campire cooking and I FINALLY got to use my new cast iron skillet...we are going again in the fall. Thanks for sharing your craft and for helping convince the old lady the peace you can get from spending time in the woodlands. God bless you buddy!!!

You can also make a simple wooden tripod and hang your chicken, leg of lamb, or whatever underneath on a piece of string in front of the fire. You just give it a few turns and it unwinds itself under its own weight. Just keep giving a few turns when you pass by. Its a vertical spit roast. Works a treat. Good idea to put a pot under your roast to catch all those lovely juices as they drip down and use these to baste your roast. I used to go to a little French restaurant near St Malo where the guy would slowly roast legs of lamb in his huge fireplace. There would always be a pot underneath with garlic and shallots cooking in the juices as they dripped down. Absolutely fantastic. The French call this method of cooking "Agneau sur une ficelle", Lamb on a string. Chicken or lamb, it don't much better than that! Great video! Well done! I've been foraging, hunting, shooting anf fishing in the wilderness, remote locations all over Europe, Russia, Canada, North America. Living outdoors on what you find is what its all about. The way things are going, we might find ourselves having to run for the hills pretty soon.

I did learn a lot of stuff from that video...thanks for sharing, I've spit roasted stuff before, but many times end up burning the outside and only just cooked on the inside, moving your coals around is a great idea as you can still keep the fire fed infront of the spit . Top job!

Hello Andy! A little tip for you,when you are cooking on a campfire ; ) The distance is ok, when you can keep your hand about 8-10 sec. between the meat (or fish ect.) and a fire. Next to the meat, of course... Cooking can take some time, but it works every time. Greetings from sunny summer of Finland!!!

I love coming to view you vids, picking up tips for when I never use them lol. I always think to myself that i will go camping and do all this bush craft!...but things crop up.. like wifey becoming pregnant etc... (sigh)....One day... Try this marinade on your chicken next time, here, where I live, they use something similar, without knowing I've got it down to this recipe. Spatchcock it and leave it over night, then grill or spit roast 1/4 cup olive oil 3 Tbs lemon juice 3 Tbs soy sauce 2 Tbs balsamic vinegar 1 Tbs Worcestershire sauce 1 tsp each garlic and onion powder 1 tsp Italian seasoning 1/4 cup brown sugar salt and pepper to taste

A joy on the eyes Andy :) For the first time this weekend I cooked a poussin in a Zebra pot over an open fire. I put a few new potatoes on the bottom and put the poussin on top. I just browned it off over the fire to get a bit of colour on it. I think I guessed it would be how you might have done it and gave it a go :) Thanks for the inspiration.

In the Primitive Age, when I was a cub scout in the United States, teepee fire lays and log cabin lays were among our first wood fire lessons. Over time, I appreciated some of the nuances, in drying damp wood around the outside while prime wood did the work inside. We were taught, and experience proved, that the log cabin lay was a decent preparation for making an even bed of coals. I HAD TO BE SELF-TAUGHT after that rudimentary introduction: we did not have resources like your channel and Simon, Bloke in the Woods. By the way: I imported my share of OH BOY! hot chocolate mix: don't let Simon hold out on you. That is fine cocoa mix from the best of our childhood memories!

I watch a lot of your videos and you are such a good cook. I especially love the English bacon. I have only been able to find it at one shop near where I live. I love it more than the American style. In my experience you can judge the quality of a cooked/fried/roasted chicken by how juicy it comes out - yours looked absolutely perfect. The best one I found in a shop had been roasted over a curved gas flame, where the heat was applied slowly and more evenly while the chicken rotated, similar to your "always go too high first" rule, slowly cooking the meat to perfection before crisping the outside to taste.

At least your not afraid to handle meat bare handed, I've seen people use one knife only for food/meat and afraid to touch raw meat with their hands. I guess they don't realize you can wash your hands and utensils after handling raw meat n food. Great vid keep on truckin, honor n strength.

Why the knife and fork for chicken? ? In a survival situation I'd be ripping these legs and wings off by hand and let the juices run down my beard. Then licking my fingers after. Dude you need to do corn on the cob with garlic butter and salt n pepper with your chicken/cooked like that because I do the same sort of thing with 4 ring ended kabab skewers in the ground and the stab another through the corn.....put stick through rings on your working skewers
