There is no reason to flatten them out with a rolling pin, roll them up and pinch all the seams. Just hand shape your loaves & they look beautiful. I just put butter on the top of the loaves fresh out of the oven. It melts on contact giving it a golden color & a great flavor too. She adds so many steps that make a longer video but makes the thought/look of baking your own bread so complicated. It is very simple to do & tastes amazing.
