Hello everyone and bread lovers like me.
Today we are making Cassava bread. Or depending where you from there are different names like yuca, manioc, Manihot esculenta, or Brazilian arrowroot.
As you guys already know making bread is one of my favorite recipes to make and for some reason I end up loving each type of bread I make and this one is not any different, its absolutely delicious.
The ingredients you will need for this Cassava Bread are:
300g of cassava
125ml of milk
1/2 tbsp instant yeast
1 Tbsp of sugar
25g butter
1 whole egg
1/2 tsp salt
350g Flour
Semolina ( optional )
Egg yolk for brushing
Method:
Cook the cassava until soft. I have cooked in a pressure cooker as I'm using frozen cassava for 15 minutes.
Remove from water and drain.
Remove the core, which is a string in the middle of the cassava and mesh it until free of any lumps.
Add milk and mix well.
Add butter and mix until completely melted.
Before adding the egg make sure the mixture is not hot, it should be warm to the touch only.
Add egg and mix.
Add sugar and salt and continue to mix.
Add flour gradually.
transfer to a floured bench and knead for 8 minutes or so to form a smooth dough. Add more flour if necessary. It should be only slightly sticky to the touch. Avoid adding to much flour as we want this bread soft.
Transfer back to bowl, cover and let it rise for 1 hour.
Sprinkle semolina on the bench and form your bread by opening into a rectangle and rolling it to the size of your bread mold.
Let it rise for another hour in a warm place.
Bake in hot oven 180C / 356F for about 45 minutes.
Let it cool down before slicing it.
