Welp, I grew up in Maine and we would just eat straight up buttered lobster, with or without the roll. I just tried lobster mushrooms for the first time (I used them in a corn chowder) and they're pretty good. I'd love to see a lobster roll made from lobster mushrooms, or something else if you think it would work better, but I have a feeling lobster mushrooms would be pretty perfect.

Chilaquiles from the north of Mexico, green sauce or red. Although, the chilango version is good too, using tortilla chips, I prefer the dish with tortillas. There's a million ways to make this dish and it's a very rich breakfast.

I'm from Edmonton, Alberta, Canada & donairs were a favourite of mine growing up. They have an interesting history behind them, they were created by a Greek man in Halifax because Greek gyros did not sell her well over there at the time so they swapped lamb for beef, a sweet donair sauce instead of tzatziki. It migrated over to Edmonton sometime in the 1980's and now there are more eaten here than anywhere else in Canada. I coincidentally ordered a seitan vegan donair yesterday from the only shop that makes them vegan and WOW I was blown away. The texture was amazing, the seitan beef almost charred and caramelized at the edges of each piece. The sweet sauce was made with cashews! It was so so so so good and it would be so awesome to see your take on it. Great video as always Mark, and Monica as always does a great job at reviewing your food!

Omg this looks soooo good!. I don't really have a regional dish that I grew with because I'm grew up a military brat in so many locations, but some of my favorites include meatloaf and my mother's gumbo. Absolutely delicious 😋

I'm also a military brat, we moved every year or two so no regional dishes come to mind. My mom was is a really terrible cook and a career woman so my sister and I grew up eating a lot of frozen and canned foods, and weird dishes my mom called quick and easy, things like opening a huge can of Campbell's spaghetti with the sweet pale tomato sauce, she'd top it with a few slices of sharp cheddar and bake it. That and some greasy marganine garlic powder toast was dinner for 4. With the advent of the crockpot one thing my mother could make that was actually good was a beef roast with carrots, onions, potatoes and celery, I loved that. One odd holiday tradition my mother's South Central Virginia farming family had was to order oysters and fix a huge pot of what they called oyster stew or chowder. They had this to eat on Christmas morning, yes morning for breakfast. They ate it with large amounts of oyster crackers in bowls. I don't remember it having snything in it besides fresh milk and cream from the dairy barn, what my grandmother always called Irish potatoes, a huge amount of butter, the oysters, salt and black pepper. I don't know why or how it became a family tradition but it was an important part of Mom's family's Christmas day celebration. I didn't like the oysters but I did love the flavor they imparted to the rest of the chowder and loved having the liquid and potatoes over my bowl full of oyster crackers. I suppose with oyster mushrooms, a plant based milk and vegan butter the recipe could be veganized if it needed to be. I doubt that woukd make a good video though because I don't know how many people make or eat such a strange oyster stew/chowder. It might be interesting to create a vegan version of a more legit chowder recipe though, if you've not already done so.

He’s literally the best when I first went vegan 4 years ago I completed a fast and was visiting for my cousins wedding in my hometown St. Louis and I’m so glad I found him I ate his food everyday for the 3 days! Toasted raviolis I miss the most and IMOs nobody ever has a clue what I’m talking about here in Atlanta lol Chris is such a sweetheart and major talent!

Hi Mark !! I'm from France so we have a LOT of dishes that are like, just dairy and meat. It's a real challenge to veganize, so you might like that. One thing that comes to mind is a Forêt-Noire (named from the black forest in Germany, I actually don't even think it's a french recipe ?) which is basically very rich chocolate cake with layers upon layers of cream and sweet cherries soaked in almond liquor. We also usually add dark chocolate shavings on top. I've been trying to find a plant based and alcohol free version for a while but I haven't been able to recreate that super rich mouth feel from the cream. Using almond flavoring works to make it alcohol free though !! Good luck if you try this, it's a very fancy dessert and amazing for special occasions

It's called Black Forest Cake in English. It's German (Schwarzwälder Kirschtorte). I actually stumbled on a vegan recipe for it years ago when I was looking for an ordinary recipe with cream, but I wasn't vegan then so I didn't bookmark it.

That's all great to know, though I can't vouch for my German pronunciation ! I did find a recipe for vegan cream from a french vegan baker that's really neat (like it's a full emulsion with cocoa butter, vanilla, almond milk ... Really good to have a richer mouth feel than a tofu cream cheese kinda thing, but without any coconutty taste) but I didn't try it on this cake. I'm motivated now and I'm gonna go look up the origins of the cake !

I found vegan cream in my local grocery store. It’s not bad at all and whips pretty much like the dairy version. Try looking around like at health food stores.

Ah unfortunately I have already looked, but i live in a little village in Normandy (the region is basically famous for its dairy products and cheese/cream rich recipe) and almost no one here is plant based + we don't have a lot of health stores (it's pretty rural). So the most I can get is almond milk and vegan nuggets, sometimes ...

Aww I love it!! I always get really excited to try re-creating foods my husband loved from before and they are a hit. I have found making food to be my love language (though not officially recognized). Some of my favorite foods growing up were Mac & Cheese and Cheese & Jalapeño Tamales. I can re-create both but they aren’t exactly the same. The cheese for the tamales gets too liquidy instead of stretchy.

Not sure if this helps, but I made faux fried calamari with dried shiitakes soaked for at least an hour in seaweed and water (and possibly fish sauce too). It was much better right away than leftover. I know, not crab, but maybe this could be applied to jackfuit? Just a thought, and it was just an experiment. I too came from Seattle... I get it! Good luck with experimenting!

I can't speak to Miyokos liquid mozzarella for pizza but I can say that their regular mozzarella was the best/closest substitute to real mozzarella that's available. It matches flavor and texture almost perfectly.

I'm from Texas and the only staple food other than tex-mex are Kolaches (ko-la-cheez)! There's a lot of germanic influence in Central Texas and I was surprised most of the country doesn't eat kolaches. Kolaches are sweet dough with fruit in the middle but the most popular form is the same sweet dough with kielbasa sausage instead of fruit. It's technically called a Klobasnek when it's filled with meat instead of fruit but we call them all Kolaches because Texans call things whatever the hell they want. There's one place in Austin that makes vegan kolaches and they're pretty good but I'd love to see your take on a vegan kolache. You'd probably have fun finding a good balance for the fluffy sweet breading and you can realistically fill it with anything you want like scrambled egg and sausage, spinach and cream cheese, or my previous favorite kielbasa cheese and jalapeño. The fruit ones are pretty good too but I've always been about savory.

What I loved growing up (and still do) is "Currywurst Pommes". Pretty famous in all of Germany, Berlin claims to have invented it, but the Ruhrgebiet - where I am from - objects that. It's pretty easy to make vegan, just get some good vegan Brawurst and know your "Currysoße" recipe and you are all set for a good, quick lunch.

Thank you for the reply! I grew up in a heavily Slavic German area of Kansas, so that may have been an influence in the version I’m accustomed to. We used to have a type of baked dumpling that I also absolutely loved that was completely different from this, but similar texture so probably why I’m remembering it. They were made not like knödel, more like a croquette. My neighbor growing up made some that were just awesome, sometimes with small pieces of apple and usually served with maple syrup. As I said, completely different type of recipe. I’m just reminded of it having seen your video. The other thing, of course, that I loved growing up were bierocks. I think you’ve made a vegan version of those before if I’m remembering correctly. Ah, to reminisce about childhood favorites....

Tacos de buche, my father catered tacos when I was a teen and those were by far my favorite. He cooked it carnitas style but it’s the texture of the buche (pork stomach I believe) that I used to love. It would be absolutely amazing to see it recreated plant based, haven’t had them since 2014.

St. Louisan here, and toasted ravioli is the one food I can't eat. Not because I didn't like it; it's because I got heartburn each and every time I had it, no matter the restaurant where it was purchased. As a result, I gave up. Then I went vegan, and simply didn't eat it. Seeing this, however? I think I'll try this recipe!

I am related to the person that invented toasted ravioli if you know about the hill St. Louis that is where they were born we had a bunch of shops and stuff down there we had all sorts of stuff from bakery’s to bars etc but the best part I think is to tell people this and they say don’t lie. That was a staple for me as well.... not skyline, the kraut! We didnt have skyline chili in Youngstown.. I think that was mostly the other side of the state. I knew about it though and that might be a fun one to reproduce!

One: I am in love with the idea because it combines the best aspects of a flavourful ravioli and crispy chip. And they turned out awesome! Two: It is just so lovely of you to be recreating Monica's favourite snack! Isn't it just the most rewarding to make a nostalgic dish for our closest ones? Honestly my favorite childhood dish is salmon cakes. I'm from South Carolina and we like to pair them with grits or rice. It's a breakfast thing with grits, although you could have that anytime, for lunch on a toasted croissant with lettuce, bacon and cheese, or dinner over white rice with stewed salmon on top with a side of fatback. That's my favorite childhood dish. Could you make that vegan? Traditionally we made it with canned salmon as well.

Its so hard to please everyone. When I dont use music I get comments about how its weird without music. When I do I get people that tell me they love the music and people that dont love the music. Its an impossible task, so I chose the music I like and edit my videos the way I enjoy them.

If we don’t have a food mill would you recommend a processor or using different tomatoes altogether?

Pre food mill I just dumped the can right into the pan and then used a wooden spoon to slowly break down the tomatoes..... OR I would pour them into a bowl and use my hands to mash them! Either way works!
