This is similar to "JUST Egg" but this is a much more cost effective version! Make sure to add black salt (Kala namak) is you like a real eggy flavour.

This looks wonderful, Liv. You'd be surprised to know that in India this is a staple breakfast. We make the "omelette" here using all kinds of dals. It's called cheela and we serve it with green chutney, raita (made out of yogurt, must try) or ketchup. It's quite filling and packed full of protein and other nutrients.

@@caraowens5905 Absolutely, make sure to add a little bit of oat flour/buckwheat flour to the batter. You could also, additionally for some real amazing flavour, add half an onion into the food processor when processing the red lentils. Red lentils have a tendency to turn a bit dry once cooked so adding onion is a tip that's really going to help.

Ooh gosh! This is exactly what I needed. Eggs are something I accidentally crave now and then (maybe it's the smell). They were an integral part of my childhood and now I can have them, but vegan style! 💫😭

Try to add the black salt at the end, it tends to lose its eggy flavor when heated!

But they have really processed it a lot to maintain the eggy texture and they prob add something like Konjac flour to make it more egg texture.

Nearly. Just Egg uses mung bean isolate, which is essentially the protein from mung beans with a lot less of the fibre, so it's less "floury" when it cooks in the way it coagulates--with more fibre it's a bit closer to a crepe or pancake than an egg. But, it's still a great and cheaper option, no question.

I’m shocked! Just made this and the second try was perfect! Since I used black salt too I think the first time was too salty but now it’s perfect! So yummy. Can’t believe we can make our own at home! Tastes and same texture as egg!

😍 THANK YOU!!!😲😆!!! Split mung beans (presoaked&drain) Non-Dairy milk Nutritional yeast Oil & Salt Garlic powder & Onion powder Baking powder Black salt (for eggy flavor) Blend until smooth. Stores about 5days in fridge in airtight container!!!

Just finished making this for breakfast it worked out so good I had to leave a positive comment I did onion mushroom wilted spinach and a Sprinkle of tvp bacon bit and cheese omelette. I made one for my wife first and she loved it. The only alteration I did was add a teaspoon or so of tapioca starch, not sure what it did or if it did anything to help. I did notice people complain about it falling apart and sticking. Experiment with a lower heat and also do it exactly how she did waiting for that top not to have liquid surface and it will work. The texture is good and even though it doesn't taste exactly like an egg it definitely stands on its own and may be better. Minimal or none Bean flavor as compared to the chickpea variation.

I tried this with some caramelised onions, mushrooms, spring onion and cajun seasoning and it was so good. Thank you for the recipe, this is my new favourite breakfast.

we call it chilla in india.. you can use basically any lentil powder for it... we like to use "besan" which is chickpea flour for same.. :)

this is absolutely the best vegan omelet mixture i've come across. Made this for breakfast this morning with spinach, red onion, red pepper, and a little Tofurkey Italian Sausague. Soooooo good!!

Chickpea flour works very well too as an egg replacement. I loved the recipes btw completely mouthwatering❤️😋🤤

Tried it this morning and it's the best thing ever! So delicious and filling! Since I try to avoid oils, I added more milk to the mixture instead and used a non-stick pan. Turned out great. Genius!

As Ashita Songara has mentioned , this is a years old mix and is used differently in various parts of India. I make it soft by adding some water and vegetable oil instead of milk. Though our lentil curries have gained a global reputation, we make many other dishes with different lentils using different techniques. Good to see world trying out other vegetarian and vegan recipes from India. I have posted some on my Instagram account @ jyotira13 .

Thank you for sharing your awesome ideas! I'll try those omelettes for sure! Before changing my diet I was eating 3 eggs a day cooked in different ways. Fortunately I changed my diet and got rid of arthritis in all my joints. Small sacrifice! 🍄🥕🥑🍆🌽🍍🍠🍅🍇🥝

My favourite after school snack growing up as easy french toast. I would just crack an egg, soak bread in the egg, add some cinnamon and fry it up. I wonder how this would do for french toast. The recipes all look amazing!!

I started soaking beans as soon as I saw it! Finally made an omelet, it didn't look as pretty because I used too much filling compared to mixture and it didn't flip right. But it tasted great! Thanks Liv.

If you mix in a little whipped acquafaba (chickpea water from a can of chickpeas) to the egg mixture going into the omelette or western, you get a much fluffier mixture, close to a fluffy egg omelette.

I make this with mung bean flour and chickpea. To add the egglike texture to it. I will try it with mung bean flour only and see how it works. I like the blend I found. It is the closest to egg I have gotten.

It would be interesting to try and combine this with some crumbled tofu for the scrambled version to get the texture. BTW Mung beans are what JUST egg is made of.

No, they are completely different beans! Won't work the same, I've tried that and failed miserably! Go to your nearest international market for the split Moong Dal to make the perfect omelette!

I'm so going to make this, I've been wanting to make breakfast sandwiches and this will be perfect. I might try baking it on a cookie tray to get a thin layer that I can then cut into squares to add to English muffins ... wonder if baking it will work?!

ATTENTION: Currently attempting this recipe with canned yellow lentils.... They are not cooking and fluffing up. It’s just a watery mess. maybe mung beans are different? I saw people say “lentils” in the comments😩 will update on next attempt 👍🏽 UPDATE: Went to the International Market, found split "Moong Dal" dried beans for $3! Followed the recipe as show and OMG, its perfect! LENTILS and Moong Dal are COMPLETELY different beans! Don't get them confused, Moong Dal beans made the perfect vegan omelette. The first omelet, I cooked on Medium high and it got a little too crispy, the second I cooked on medium low and flipped while the top was still a little watery and it was perfect for me!

+frances sweeney yes it was! I have not. I’m a bit sceptical of what it would do to the consistency of baked goods. I think aquafaba is a better egg substitute for baking. This might work for quiche though!
