Came here after watching Uncle Roger's reaction to "Thai Green Curry" to see if things have changed at all... nope still not curry. Like totally appreciate throwing together healthy and easy recipes with what's commonly accessible, but c'mon man, show some respect. How would you feel if a popular Indian chef rolled up some pre-packaged roast beef in sliced white bread, sloshed some canned gravy overtop, and called it "Easy Beef Wellington"? And what if that turned into people's conception of classic British food?

Always wash rice 2-3 times before cooking it. It removes the excess starch.

Tell that to the sugar tax. Thanks to that more foods now than ever are now stuffed with chemical sweeteners that are the opposite of healthy. These taxes on supposed 'unhealthy food ingredients' have also put a strain on the pockets of working class families, pushing many to the breadline. While not Jamie's fault per se, his backing of these taxes certainly hasn't helped. The real issue regarding healthy eating and the time management of such falls to education, which has always lacked. Adding taxes has done nothing but cause damage and stress.

Wash the rice first to make it less starchy and to get rid of dirt. Then soak it for a while. Finally, it should be cooked in a saucepan not a wide pan. 2 times the amount of water is too much if it's a saucepan and it's soaked. A little over 1.5 times is a good measure

What do you mean? Ur not supposed to put yogurt in curry but maybe some of them are. Ur not supposed to blend the paste after you cook it on the pan you supposed to blend it first then cook it onto the pan, you supposed to blend garlic, shallots, ginger, galangal, turmeric and, chili make sure it's the spicy one and when you cook the paste. You have to put flatten lemon grass and throw some star anise, cumin, clove, and nutmeg and the important thing is coconut cream and you wanna simmer the paste and don't forget to stir it make sure it doesn't burn on the bottom of the pan and then you place the shrimp one by one and cook it and then done. And then the rice, use jasmine rice and cook it with 1 and ¼ cup of water and use rice cooker. And after it's cooked fluff the rice so it doesn't became clumpy we want rice that's dry and not clumpy, we don't eat rice cake! If we wanna eat rice cake we pound the rice or we cook our rice inside a banana leaves and boil it there is no way Asians will cook rice cake on a pan. Eat it on a plate with a side of cucumber, tomato or maybe lime if you want to and then enjoy your meal.

Funny how some people find it necessary to correct Jamie on how to cook the rice. Not everyone has a rice cooker at home, how about you try cooking rice using a pan and see if you can get the same results as his. If you have a rice cooker at home(which I do), use it. But for people who don't, they can follow the video and still be able to enjoy this nice dish.

Forget about using Rice Cooker, Any Chef with basic cooking skills knows that rice needs to be washed before cooking, especially for dishes involving basmati rice as you don't want it to be sticky in texture. And this so called "renowned" chef just plain added rice to cook. I'm sorry but, Jamie Oliver deserves all the hate he's getting. He's a terrible chef that has no respect to any asian cusine whatsoever. A small amount of research would teach these basics and anyone with an inch of respect to their jobs would do that research. Now coming to cooking rice using a pan, Anyone can do it easily, it doesn't need a professional chef to get right.

I really can't understand why Jamie uses weird ingredients for these cooking videos, first it was chilli jam now a curry with mango chutney, even if its wanting to put your twist on things, try to make them edible and palatable for everyone else. I am not a chef but just from the ingredients this doesn't sound like it tastes nice at all, its probably as sweet as a dessert.

No. It's a pereption thing. I have introduced my American wife to the World of curries. Thai, Cambodian etc. She believed curry was a specific flavour (cumin, turmeric, chilli etc) but it's not. Most of her preferences are around "fruity' cuurries now (pineapple is her favourite this week 😁). Also, the mango chutney Jamie used does contain spices.
