@@dafakisdis5340 belly meat, fish bone and heads for broth/fish stock. You can fry them, not with flour batter but with spice rubs, until its crispy and some bones are edible. In most places that's how it goes

The Japanese eat better, cleaner etc. They also eat more nose to tail which is much healthier. However, you didn't have to dog another group of people. Westerners do actually use all of the animal as well - take for example cows. Westerners usually and typically only eat the muscle, but, the bones are used for gelatin, the hide is used for leather, a lot of the tissues not eaten are used for pet food, the list goes on. Just because westerners separate the animal differently all the pieces are still being utilized. And when I order catfish at the restaurant, they serve the head and we eat the head! I agree, the Japanese do it the best and they avoid factory farms and factory style processing, so hats off for that. But things like Halal method and Yulan meat festival probably deserve your need to point out a flaw much more so than western society.
